Yellow Squash and Tomatoes are truly delightful. This simple and easy recipe uses only a handful of ingredients. It’s seasoned with fresh basil which makes it taste so scrumptious in my opinion. This recipe is healthy, low calorie, gluten free and vegan for those of you on special diets.

I made this recipe back in early May when the country was still closed down. I served it with Au Gratin Pork Chops so the combination between the two was really tasty. If you have an abundance of either yellow squash or tomatoes in your garden this is the recipe for you!
The nice thing about this side dish is it can be whipped up in 10 minutes. It’s the perfect side for any kind of entree, but certainly nice enough to serve for company as well. For those of you who are tired of eating plain vegetables for dinner, this recipe gives you great flavor without all the fuss. Plus, it’s really fast, and you serve your family something healthy to boot.

This easy side dish can be whipped up in ten minutes!
This is a great way to use up an abundance of yellow squash and tomatoes.
Yellow Squash and Tomatoes was fantastic served with Au Gratin Pork Chops. That one-dish meal also included au gratin potatoes and green beans.
Here’s what I did.
I used these ingredients.
Pour olive oil into a saute pan and heat. Add squash.
Saute squash about 3-5 minutes, turning occasionally.
Add grape tomato halves.
Add sea salt, pepper and fresh basil. Stir and saute an additional 2-3 minutes or until veggies are tender.
If desired, sprinkle with fresh basil leaves to serve.

Equipment
- 1 large skillet
- 1 sharp knife to cut vegetables
- measuring spoons
- 1 spatula
- 1 wooden spoon
Ingredients
- 2 medium yellow squash coarsely chopped
- 2 tbsp. olive oil
- 10 oz. pkg. grape tomatoes halved
- 2 tbsp. fresh basil minced, or 2 tsp. dried basil
- 1/8 tsp. ground black pepper
- 1/2 tsp. sea salt
Instructions
- Heat a large skillet over medium heat.
- Add oil and heat an additional minute.
- Sauté squash in oil until tender, about 5 to 8 minutes.
- Add tomatoes, basil, salt and pepper.
- Reduce heat to low.
- Cook 2-3 minutes longer or until heated through.
