Creamy Sweet Carrots are heavenly. Truly. This easy 5-ingredient recipe is marvelous for weeknight, company or holiday dinners. It’s especially good if you need to throw a side dish together in 10 minutes or less! On top of that, the recipe is gluten free. It’s one of those easy side dishes that everyone loves and everyone wants a second serving from. 🙂

We had some neighbors diagonally across the street from us that moved the beginning of August. They put their house up for sale and four hours later they had a contract on it. They moved out about three weeks later. I offered to bring them a meal the day they closed on the house. I put together a Chicken Amandine, my favorite home-baked bread and an M&M Chocolate Pie along with these carrots.
They loved the meal. Earlier that week I had dropped off my Amish Chicken and Noodles, Creamy Sweet Corn and Gluten Free Zucchini Muffins. They loved both of the meals and had enough food to get them through several days. There’s nothing quite like having a hot, home-cooked meal when you’re in the middle of packing or setting up a new home. They were grateful for the food, and I was glad to be able to do something to help out.
Creamy sweet carrots really is one of the easiest recipes for a side dish you’ll ever make. I’ve tried the basic recipe with corn, peas and peas and carrots and it comes out wonderfully every time. It’s also easily adaptable for more servings if you need to feed a crowd. I actually made a half batch since I was making only for two people.
No matter how you slice it, Creamy Sweet Carrots is delicious. I hope you give it a try.

Creamy Sweet Carrots was a terrific side dish with Chicken Amandine.
Here’s what I did.
I used these ingredients.
Melt butter in a large Dutch oven. Add cubed cream cheese. Heat and cook until cheese melts.
Add thawed, frozen carrots, sugar and salt and pepper, if desired.
Continue to cook and stir over medium heat until carrots are cooked through.
Transfer mixture to a serving dish to serve.
Our neighbors thought Creamy Sweet Carrots was fantastic with the Chicken Amandine.
This is a wonderful way to use up a lot of carrots from your garden.

CREAMY SWEET CARROTS
(My own concoction)
Creamy Sweet Carrots
Equipment
- 1 large sauce pan
- 1 whisk
- 1 wooden spoon
- 1 table spoon to cube cream cheese
- measuring cups
- measuring spoons
Ingredients
- 2 lb. bag frozen crinkle-cut carrots thawed
- 1/2 tsp. Salt and pepper to taste
- 2 tbsp. granulated sugar
- 1/2 stick unsalted butter (1/4 cup)
- 4 oz. pkg. cream cheese cut in cubes
- 1/4 cup whipping cream
Instructions
- In a saucepan, melt butter and cream cheese.
- Stir with a whisk frequently until cream cheese breaks down.
- Add the carrots, granulated sugar, salt and pepper, if desired.
- Stir frequently with a wooden spoon so all the ingredients blend well together.
- Cook over low heat until carrots are hot and cooked through.
- This will take 10-15 minutes.
- Add the whipping cream and stir thoroughly.
