Rainbow Chip Blondies
Rainbow Chip Blondies are so delightful. These scrumptious bars are made with one of my favorite chocolate chip cookie dough recipes. But instead of chocolate chips, these blondies are made with vanilla-flavored rainbow chips instead. These colorful cookies are easy to whip up and fantastic to the taste buds. 🙂

Rainbow Chip Blondies received some of the highest marks and reviews when I sent them out to the staff at John’s Day Neuro staff back in September. I made several kinds of cookies with Rainbow Chips. They raved and raved over these. These cookies are dense and full of flavor. They’ll surely cure any sweet tooth craving. Not only that, you’ll be hard pressed to stop at just one.
These delicious bars are terrific for birthday celebrations, potlucks, tailgating parties or backyard barbecues. They’re also great for Christmas Cookie Exchanges or any kind of gathering with friends or family. Give them a try and you’ll see what everyone is raving about. 🙂

These are terrific for tailgating parties, potlucks and backyard barbecues.
Rainbow Chip Blondies will knock your socks off!
Here’s what I did.
I used these ingredients.
Soften butter. Add eggs, sugar, brown sugar, vanilla, baking soda and sea salt.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add Rainbow Chips.
Stir ingredients well to combine.
Press mixture into a greased 12×17-inch cookie sheet.
Sprinkle more Rainbow Chips over top.
Bake at 350 degrees for about 30-40 minutes. Cookies should be lightly browned and a toothpick inserted in center will come out clean.
Rainbow Chip Blondies are also marvelous for Christmas Cookie Exchanges or birthday parties!

RAINBOW CHIP BLONDIES
(My own concoction)
Rainbow Chip Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- 1 spatula
- measuring cups
- measuring spoons
Ingredients
- 1 1/2 cups unsalted butter softened
- 1 1/2 cups light brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 20 oz. pkg. Yum-Mallow Rainbow Chip Morsels divided use (two 10-ounce packages)
Instructions
- Preheat oven to 350°.
- Grease or spray an 11x17” jelly roll pan with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour and 1 ½ cups Rainbow Chip morsels with a wooden spoon until combined.
- Stir thoroughly; this may take 4-5 minutes.
- Press dough into prepared cookie sheet.
- Sprinkle remaining ½ cup of Rainbow chips over top.
- Bake for 30-40 minutes at 350°, or until lightly browned and a toothpick inserted in center comes out clean.
- Cool completely before cutting blondies into bars.
