Expresso Chocolate Chip Cookies
Boy did this cookie ever win the prize! Enjoy a little dose of coffee and chocolate in these amazing Expresso Chocolate Chip Cookies. You will certainly get your caffeine fix with these bad boys! I found the Expresso Chocolate Chip morsels at a local Wal-mart and decided I needed to give them a try. I’m glad I did because these cookies were really a rave. 🙂

I’ve been sending cookies out with John almost every Monday during his lengthy rehab at a Day Neuro center in downtown Dallas. By far, these cookies were the most talked about. A month or two later, and John still gets comments about the “Expresso cookies.” Yes, these cookies are so fabulous you’ve just got to give them a try.
I love to bake cookies anyway, so I’m always looking for new ways and recipes to make them. I used one of my favorite recipes but used these heavenly expresso morsels instead of regular chocolate chips. Yessiree, these cookies will make your mouth water. If you want to wow your family and friends during the Christmas holidays, make up a batch of these marvelous cookies. Don’t plan on taking home any leftovers though. These cookies will be snatched up right away.:)

Expresso Chocolate Chip Cookies are fantastic for Christmas Cookie Exchanges, holiday or tailgating parties or potlucks.
Here’s what I did.
I used these ingredients.
Soften butter. Add brown sugar, white sugar, eggs, baking soda, baking powder, salt and vanilla.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add Expresso chocolate chip morsels.
Stir to combine.
Shape dough into balls. Place on greased cookie sheets. Freeze for about 15 minutes.
Bake for about 12-15 minutes or until done. My cookies took 18 minutes to bake. Rotate cookie sheets on racks every six minutes during baking time.
These are terrific for tailgating parties.
Serve with coffee, if you dare!

EXPRESSO CHOCOLATE CHIP COOKIES

Expresso Chocolate Chip Cookies
Equipment
- 3 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 spatula
- measuring cups
- measuring spoons
Ingredients
- 1 cup unsalted butter softened (2 sticks)
- 1/2 cup granulated sugar
- 1 1/2 cups light brown sugar packed
- 2 large eggs
- 2 1/2 tsp. real vanilla extract (no imitation vanilla flavoring)
- 3 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 3/4 tsp. sea salt
- 1 tsp. baking powder
- 1 tsp. baking soda
- 24 oz. bag expresso baking chips (two 12-ounce bags)
Instructions
- Preheat oven to 350°.
- In a large mixing bowl, mix the butter, sugars, eggs, vanilla, salt, baking powder and baking soda with an electric mixer until smooth.
- Stir in flour and expresso chocolate chips with a wooden spoon to combine.
- Shape dough with hands into golf ball-sized dough balls and place a couple inches apart on greased cookie sheets.
- Place in freezer for about 15 minutes.
- Bake cookies for about 12-15 minutes or until edges are light brown.
- Rotate cookie sheets on racks every six minutes during baking time.
- Cool completely.

Making any kind of cookie is a great way to spend time with the family. There’s something about baking that brings a sense of togetherness.

I have been making biscotti with the espresso chips for several years now, but never just chocolate chip cookies. They sound great.
