Date Coconut Blondies are outrageously good! No kidding. These delicious cookies are filled with dates and coconut. I know dates and coconut don’t float everyone’s boat. But for those of you who enjoy these flavors and textures, Date Coconut Blondies absolutely rock!

I made these delicious jewels for the last couple of weeks of John’s Day Neuro program back in November. I tried to send out goodies weekly as appreciation for all their hard work. It’s not easy dealing with stroke patients. Even though John was coming along excellently, there are other patients with traumatic brain injuries (not always from stroke) that need extra care. It’s a hard job. So I sent out these cookies in the middle of November for everyone to enjoy.
Date Coconut Blondies are certainly good for the holidays, but these tasty treats can be made up year round. I recommend them any time you need a dessert for a potluck, tailgating party or snacks for soccer practice or games. Don’t be surprised if even your kids love these goodies. Yep. They’re that good. 🙂
Date Coconut Blondies will knock your socks off!
If you enjoy dates and coconut, this is a wonderful dessert for you!
These chewy brownies will have you drooling from the first bite.
Here’s what I did.
I used these ingredients.
Soften butter. Add eggs, sugar, brown sugar, vanilla, baking soda and salt.
Mix with an electric mixer until smooth.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add dates and coconut.
Stir with a heavy-duty spoon until well mixed.
Spread and pat down mixture into a greased 12×17″ cookie sheet.
Bake at 350 degrees for 20-30 minutes or until a toothpick inserted in center comes out clean.
Date Coconut Blondies are marvelous for your sweet tooth!
These bar-type cookies are rich and decadent. They have the perfect texture for a brownie.
It was hard for me to stay out of the Date Coconut Blondies. They’re that good. 🙂

DATE COCONUT BLONDIES
(My own concoction)
Date Coconut Blondies
Equipment
- 1 11x17" jelly roll pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 1 1/2 cups unsalted butter softened
- 1 1/2 cups light brown sugar firmly packed
- 3/4 cup granulated sugar
- 3 large eggs
- 2 tsp. real vanilla extract
- 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 1 1/2 tsp. baking soda
- 1 tsp. sea salt
- 16 oz. boxes dates chopped (two 8-ounce boxes)
- 2 cups sweetened flaked coconut
Instructions
- Preheat oven to 350°.
- Grease or spray a 11x17” jelly roll pan with cooking spray.
- In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
- Beat at medium speed with an electric mixer until fluffy.
- Stir in flour, dates and coconut with a heavy-duty spoon until combined.
- Stir thoroughly; this may take 4-5 minutes.
- Bake for about 30 minutes at 350°, or until lightly browned and a toothpick inserted in center comes out clean.
- Cool completely.

Have you ever made the Date Coconut Blondie recipe as described above but substituting Gluten Free Flour.

Hi, Linda. I haven’t used gluten free flour yet. But I’ve never had any problem substituting a good gluten free flour in any recipe. I recommend cup4Cup brand or any good GF flour.
