Christmas Cookie Extravaganza – 2021
One of the incredibly delicious treats I made for this year’s Christmas Cookie Extravaganza was a Tropical Fruit Pie. Tropical fruit, you say??? Yes, Candied Tropical Fruit Mix along with sliced almonds and vanilla chips baked up to perfection in this amazing pie. I used my basic Toll House Pie recipe as I have in several other pie recipes and it was spectacular.

Paradise Fruit Company sent me a large box of assorted candied fruits to blog about. One of the flavors was the tropical fruit mix. I ended up making a Tropical Fruit Bread and this Tropical Fruit Pie with it. Both were incredibly good. I only got a nibble of this pie before John gave it to a friend and former co-worker he went to breakfast with. John told him to freeze the pie to take on the plane and by the time he reached Atlanta, it should be defrosted enough to set before his relatives. We got word back from him that they loved, loved, loved the pie!
Just because cookies have become so traditional for a holiday dessert, don’t think that your family, friends, neighbors or co-workers won’t enjoy something along the lines of a pie. Almost everyone delights in eating pie and they will sure enjoy this one. But let me warn you in advance: it’s sweet, ultra rich, decadent and so irresistible you’ll become addicted after one bite!
Tropical Fruit Pie is great with orange sherbet on top!
Almonds add crunch, vanilla chips add sweetness and the tropical fruit adds amazing flavor and texture.
The flavors of pineapple, mango, papaya and cantaloupe are magnificent together in this festive and elegant pie.
Here’s what I did.
I used these ingredients.
Beat eggs in a mixing bowl until frothy – about 3 to 5 minutes.
Add flour, sugar and brown sugar.
Beat with an electric mixer until smooth.
Add melted butter.
Slowly and gently beat with an electric mixer until all the butter is worked in. Beat slowly to avoid splatters!
Add Tropical Fruit Mix, almonds and vanilla chips or premiere white baking chips.
Stir ingredients with a wooden spoon to combine.
Spread pie filling into prepared pie shell.
Bake at 325 degrees for about one hour or until center is set.
Cool pie before serving.
Serve it ala mode if desired.
Tropical Fruit Pie is a marvelous dessert to make for holiday parties.

TROPICAL FRUIT PIE

Tropical Fruit Pie
Equipment
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
Ingredients
- 2 large eggs
- 1/2 cup flour (I used UNBLEACHED all-purpose flour)
- 1/2 cup granulated sugar
- 1/2 cup light brown sugar packed
- 1 cup unsalted butter melted (2 sticks)
- 6 oz. vanilla chips or premiere white baking chips
- 1 cup almonds sliced
- 8 oz. container Paradise Fruit Company Tropical Fruit Mix
- 1 unbaked pie shell
Instructions
- Preheat oven to 325°.
- Melt butter and set aside to cool.
- In large bowl, beat eggs until foamy; this will take 3-5 minutes.
- Beat in flour, granulated sugar and brown sugar until well-blended.
- Blend in the cooled, melted butter.
- Stir in vanilla chips, tropical fruit mix and almonds.
- Pour into pie shell.
- Bake at 325° for 1 hour.
- Serve warm with whipped cream or ice cream.
