Chopped Cucumber Caprese Salad has become one of my go-to recipes over the past few months. It is one terrific salad for potlucks, company and especially for people with either gluten intolerance or diabetes. The dressing is very simple: olive oil, balsamic vinegar, salt and pepper. That’s it. No sugar. But you’ll find it doesn’t need any.

One of the gals from our Thursday night Bible study group brought this salad one night for dinner. I loved it and even got to take home some leftovers. A few weeks later I decided I would like to make it and she gave me her ingredient list. We talked a little bit about amounts. I thought I would give it a go even though there were not really strict amounts just approximations. It took me awhile to find the mozzarella pearls in the store. I found them in the refrigerated produce section (not where you usually find cheese). Actually, they’re easy to find if you know what section of the grocery store to go to.
Anyway, I made this up for a potluck dinner one night and it was very well received. I’ve made it for company a couple of times. I’ve also taken it for a meal for someone who has diabetes. Everyone has really enjoyed this delightful recipe. It’s actually very simple: English or Persian cucumbers, grape tomatoes, red onion, mozzarella pearls and fresh basil.
Chopped Cucumber Caprese Salad is one of those really easy recipes that you fall in love with the first time you try it. The salad is chopped fine and the flavors of basil and balsamic vinegar blend appetizingly with the other ingredients. This salad is sugar free and gluten free for those on specific diets. Go ahead and indulge. Every bite is mouthwatering.
Chopped Cucumber Caprese Salad is spectacular!
When I took these pictures I had to purchase fresh basil at the store. But now the basil on my back porch is thriving and I’ve used my own fresh basil the last few times I’ve made this tasty salad.
The mozzarella pearls are really cool. I’ve never eaten them before trying this salad.
This delicious salad is easy to make for company or holidays since it can be made earlier in the day and refrigerated until you’re ready to serve it.
Here’s what I did.
I used these ingredients. While the recipe called for either Persian or English cucumbers, I’ve also used regular cucumbers to good effect.
I usually only use about half this amount, but this first batch was for a potluck so I doubled the batch.
Quarter an English cucumber and then slice down in small slices.
Place the cucumber in a salad bowl or large serving bowl.
Quarter the grape tomatoes.
Toss the tomatoes on top of the cucumbers in the salad bowl.
Add very finely diced red onion.
Add the mozzarella pearls.
Wash and thoroughly dry the fresh basil. Slice the basil in thin strips.
Add the basil.
Sprinkle with salt and pepper.
Drizzle with olive oil.
Drizzle with balsamic vinegar.
Stir ingredients to combine. Refrigerate until ready to serve.
This is such an easy salad to make for family or company dinners.
Chopped Cucumber Caprese Salad is sugar free so it’s a great salad to whip up for diabetics.
This is a delightful salad to make up for salad luncheons, too.

CHOPPED CUCUMBER CAPRESE SALAD

Chopped Cucumber Caprese Salad
Equipment
- 1 large serving bowl
- 1 sharp knife to cut vegetables
- measuring cups
- measuring spoons
Ingredients
- 1 large English or Persian cucumber quartered and sliced thinly
- 10 oz. container grape tomatoes cut in quarters
- 3 tbsp. red onion very finely diced
- 8 oz. pkg. mozzarella pearls
- 1/4 cup fresh basil cut in strips (measure amount after cutting)
- 1/4 cup extra-virgin olive oil
- 2 tbsp. balsamic vinegar
- 1/4 tsp. sea salt or to taste
- 1/8 tsp. ground black pepper or to taste
Instructions
- Place cut cucumbers, tomatoes, red onion and basil into a serving bowl.
- Add mozzarella pearls.
- Sprinkle with salt and pepper.
- Drizzle olive oil then balsamic vinegar over top of salad.
- Combine well.
- Refrigerate until ready to serve.

I can’t eat cucumbers, can I use something else instead?
