Pay Day Chocolate Pie

Back in 2020, I made a lot of Chocolate Pies using this basic recipe. All of them turned out fantastic. When I saw some Pay Day Bars at a grocery store on vacation, I thought about making one of these rich, chocolate pies loaded with Pay Day Bars. Yes, they turned out fantastic.
I ended up making this pie for an Empty Nester’s potluck at our church. It turned out so well. Anyone who enjoys the combination of chocolate and peanuts will love this easy 5-ingredient dessert! If you want one of the easiest desserts to make over the holidays, this Pay Day Chocolate Pie can’t be beat. Enjoy.
Pay Day Chocolate Pie is ultra swoon-worthy!
This heavenly Chocolate Pie is rich, decadent, chocolaty and peanutty!
This easy 5-ingredient recipe is the perfect dessert for company.
Here’s what I did.
I used these ingredients.
Combine half-and-half with a large 6-ounce package of instant chocolate pudding.
Whisk for two minutes until pudding thickens.
Add Cool Whip or other non-dairy whipped topping.
Whisk ingredients again until well-blended.
Chop Pay Day Bars into small pieces.
Add chopped Pay Day Bar pieces to the chocolate pudding mixture.
Stir ingredients to combine.
Remove the plastic covering from the chocolate pie crust.
Spoon chocolate pudding mixture into the chocolate crust.
Sprinkle with reserved chopped Pay Day Bars, and place halved Pay Day Bars around the outside of the pie. Freeze pie until 30 minutes before serving.
(The plastic lid will not fit on the pie now because it will be too full. I recommend freezing the pie before covering it with any kind of plastic wrap so the wrap doesn’t adhere to the pie filling.)

PAY DAY CHOCOLATE PIE
(My own concoction)
Pay Day Chocolate Pie
Equipment
- 1 whisk
- 1 large mixing bowl
- measuring cups
- 1 sharp knife to chop Pay Day bars
- 1 wooden spoon
Ingredients
- 17.7 oz. Pay Day Bars divided use
- 1 1/2 cups half-and-half
- 5.85 oz. pkg. instant chocolate pudding
- 8 oz. Cool Whip or other non-dairy whipped topping
- 9 inch chocolate pie crust
Instructions
- Cut 4 Pay Day Bars in half lengthwise.
- Set aside.
- Coarsely chop remaining Pay Dar bars; reserve one-quarter cup for topping.
- Set aside.
- Combine pudding with half and half in large mixing bowl and whisk vigorously for two minutes.
- Fold in Cool Whip topping.
- Stir in all but ¼ cup chopped Pay Day bars.
- Pour chocolate mixture into chocolate crust.
- Place the eight Pay Day bar halves evenly around the edge of the pie.
- Sprinkle reserved ¼ cup of coarsely chopped Pay Day Bars on top of pie.
- Freeze for 6-8 hours before serving.
- Remove from freezer about 10-15 minutes before serving.
