Cranberry Pear Overnight Oatmeal

Cranberry Pear Overnight Oatmeal is something special. I created this delicious oatmeal recipe because I was trying to use up an abundance of fresh cranberries after holiday baking. I added pears because I was trying to use them up as well. Along with cinnamon, nutmeg and vanilla to flavor the oatmeal, I used brown sugar to sweeten it and oat milk. That kept the recipe gluten free and vegan.

I usually don’t add sugar when I make overnight oatmeal. I figure everyone can add sugar or sweeteners as they desire after it’s cooked. However, with the tartness of cranberries, I thought it would be a good idea to add brown sugar. Actually, this recipe turned out perfectly. We loved it. It was sweet enough without any additional sugar, and the fruit flavors are just what my husband really loves when he eats oatmeal every day.
Just so you know, this recipe is usually done in four hours on LOW! So if you don’t have a programmable slow cooker, consider making this up during the day and then storing in individual serving-size containers in the fridge until you’re ready to eat it. It heats up wonderfully. We have even frozen this stuff before and it thaws and reheats well too.

This recipe takes about 4 hours in the slow cooker. That works great if you have a programmable slow cooker. If you don’t you can make this up during the day time and put it in individual serving size containers and heat up for breakfast throughout the week!
Here’s what I did.
I used these ingredients, plus water.
Pour steel-cut oats into a large mixing bowl.
Add brown sugar, cinnamon, nutmeg, salt and vanilla extract.
Add oat milk, water and cranberries.
Add diced, peeled pears and stir ingredients to combine.
Pour ingredients into a crockpot and stir well to combine.
Cook on low heat of slow cooker about 4 hours until the oatmeal thickens. Stir once or twice while oatmeal is cooking.
Serve immediately. The oatmeal will also keep warm for an hour or so if you need to hold it until everything else is finished cooking.
I was trying to use up a lot of fresh cranberries and pears so there’s a lot in this oatmeal. My husband loved it.
This recipe was sweetened just enough without being overly sweet or under-sweetened!

Cranberry Pear Overnight Oatmeal
Equipment
- 1 6 or 7-quart slow cooker
- 1 large mixing bowl
- 1 wooden spoon
- 1 sharp paring knife to peel and dice pears
- measuring cups
- measuring spoons
Ingredients
- 24 oz. steel-cut oats (I used Bob’s Red Mill known as pinhead oats or Irish oats)
- 48 oz. container Califia Farms Oat Milk or almond milk
- 1 cup light brown sugar packed
- 4 cups water
- 1 tbsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1 tsp. sea salt
- 1 tbsp. vanilla extract
- 2 medium Bartlett pears washed, pared, diced (about 4 cups)
- 2 or 3 cups fresh cranberries washed
Instructions
- Spray a large 6 or 7-quart crockpot very generously with cooking spray.
- Combine all ingredients in large mixing bowl and spread into crock pot.
- Cook on low overnight for approximately 4 hours.
