I know, I know! I’ve been making a lot of “fluff’ salads lately. Orange Creamsicle, Apricot, Watergate, and now Lemon Cheesecake Fluff. I love, love, love these creamy, fluffy fruit salad recipes. This one includes lemon-flavored Jell-O, along with cream cheese cheesecake pudding mix to give it that nice cheesecake oomph. I also include pineapple, Cool Whip, diced walnuts, miniature marshmallows and a little lemon extract to give it that puff of flavor that really brings out the lemon deliciousness of this salad.

We had a church-wide picnic back at the end of April. I brought along a Gluten Free Apricot Dump Cake Cobbler and this delicious salad to serve. We enjoyed every bite of these delectable goodies. My husband loves fruity desserts, but especially these fruity, creamy, fluffy salads. He’d rather eat that any day over a dessert. (No kidding!)
Another nice thing about these salads is they can be made in advance, making them perfect for holiday or company dinners. They’re actually pretty easy to whip up, even though they have a few different refrigeration steps along the way. This fruity salad is elegant and beautiful enough to serve for festive occasions. But easy enough to make for family dinners.
If you need festive and elegant, serve the fluff in a trifle dish, glass bowl or individual parfait dishes. Otherwise, serve it out of a regular serving bowl. No one will mind…they’ll be too busy digging out spoonful after spoonful of this yummy concoction. Lemon Cheesecake Fluff is mouthwatering.
The refreshing flavors of lemon along with a delicious cheesecake texture, make this fluffy salad sparkle!
This salad is certainly festive and elegant enough to serve for any company or holiday dinner.
Serve this salad in parfait or champagne glasses, if desired.
Here’s what I did.
I used these ingredients.
Pour lemon jell-o into a mixing bowl.
Add boiling water.
Stir well to dissolve.
Add cold water.
Stir well to combine. Refrigerate 15 minutes.
Add cheesecake pudding mix and lemon extract.
Whisk ingredients until well combined. Refrigerate 20 minutes.
Add cream cheese and Cool Whip.
Stir well or whisk to combine.
Add miniature marshmallows, crushed pineapple and finely diced walnuts.
Stir well to combine. Refrigerate 2 hours.
Remove from refrigerator and transfer to a trifle dish, glass bowl or individual parfait dishes.
I transferred the mixture to a glass bowl.
Sprinkle the top with diced walnuts, miniature marshmallows, maraschino cherries and a lemon slice, if desired.
Lemon Cheesecake Fluff is also beautiful served in champagne glasses!
Every bite will have you salivating.
Lemon Cheesecake Fluff is terrific for company but easy enough to make for regular family dinners.
Even though Lemon Cheesecake Fluff is technically a “salad,” it’s sweet enough to be served for dessert!

LEMON CHEESECAKE FLUFF
(My own concoction)
Lemon Cheesecake Fluff
Equipment
- 1 trifle dish or use a glass bowl or parfait dishes
- 1 wooden spoon
- 1 whisk
- 1 nut chopper if nuts are not previously chopped
- measuring cups
- measuring spoons
Ingredients
- 3.4 oz. box lemon Jell-O
- 3.4 oz. box cheesecake pudding mix
- 1 cup boiling water
- 1 cup cold water
- 1 tsp. lemon extract
- 8 oz. pkg. cream cheese softened (one eight-ounce block)
- 8 oz. container Cool Whip
- 20 oz. can crushed pineapple UNDRAINED
- 1/2 cup walnuts finely diced (reserve two tablespoons for topping) (measure after chopping)
- 2 cups miniature marshmallows divided use
- 12 maraschino cherries for decoration, if desired
Instructions
- In a mixing bowl, dissolve the lemon Jell-O in boiling water.
- Stir until thoroughly mixed.
- Add cold water and stir ingredients to combine.
- Place bowl in refrigerator and refrigerate approximately 15 minutes.
- Add cheesecake pudding mix and lemon extract and whisk into Jell-O mixture until pudding mix is completely dissolved.
- Refrigerate mixture an additional 20 minutes.
- Add softened cream cheese, whipped topping, undrained crushed pineapple, 1 ½ cups marshmallows and all but two tablespoons of the nuts.
- If desired, transfer mixture to a glass serving bowl, trifle dish or parfait dishes.
- Refrigerate mixture for 2 hours.
- Garnish fluff with remaining marshmallows, diced nuts, maraschino cherries and a lemon slice curl (if desired.)
- Refrigerate until ready to serve, or overnight.

Lemon Cheesecake Fluff pops in lemony flavor since it includes a teaspoon of lemon extract in the ingredients.
Marshmallows, pineapple, walnuts and maraschino cherries provide a little texture.
The combination of lemon Jell-O, cream cheese and Cheesecake Pudding Mix make this confection taste like Lemon Cheesecake!
