Peach Cinnamon Blondies
I have a fantastic recipe that I’ve fiddled with a lot!–Added this–added that–taken out this–taken out that–and every time the results are outstanding. Peach Cinnamon Blondies come from that favorite recipe. These blondies are made with fresh peaches, walnuts, cinnamon and cinnamon chips. They include browned butter in the blondie as well as the icing. They are magnificent! 🙂 And, if you have a sweet tooth, you’ll think they are absolutely heavenly.

I took a batch of these beautiful and delicious blondies along with Cherry Almond Blondies to a block party in our neighborhood back in June. The hostess provided burgers and everyone else brought salads, fruit, appetizers and desserts. We had a great time getting to know some of our neighbors. Because everyone wanted to try ALL the desserts that were brought, almost everyone cut one of these blondies in half. Even still, they were a big hit and the few leftovers we had went to some of our immediately neighbors who didn’t come to the party.
While Peach Cinnamon Blondies take a little more time to make than some recipes (because of browning the butter for blondie and icing), they are definitely worth it. You’ll be drooling over every bite of these rich, decadent swoon-worthy cookies. Yum.
Peach Cinnamon Blondies are so mouthwatering.
This lovely dessert is strong on cinnamon flavor!
Every bite is chocked full of peaches, walnuts and cinnamon chips!
This is a delectable way to enjoy peaches!
Here’s what I did.
I used these ingredients for the blondies.
Melt butter in a small sauce pan over low to medium heat.
Bring to a boil and stir continuously until butter browns. This will take 5 to 10 minutes.
Transfer browned butter to a large mixing bowl.
Add brown sugar.
Beat mixture with an electric mixer until smooth. Allow mixture to cool at least 5 minutes before adding remaining ingredients.
Meanwhile, mash bananas on a plate with a fork.
Add eggs, bananas, salt and vanilla.
Beat with an electric mixer again until ingredients are smooth and banana is completely integrated into the other ingredients without lumps.
Add UNBLEACHED all-purpose flour. (Bleached flour toughens baked goods). Add walnuts, cinnamon chips and peaches.
Stir ingredients to combine.
Spread blondie mixture into a greased 9×13″ glass baking dish.
Bake at 350 degrees for 45-50 minutes, or until a toothpick inserted in center comes out clean. Allow blondies to cool completely before adding icing.
I used these ingredients to make the icing.
Melt butter in a small sauce pan.
Add brown sugar and cinnamon. Stir to combine.
Add half-and-half.
Bring to a boil then remove from heat. Cool mixture five minutes.
Add powdered sugar.
Whisk ingredients until completely smooth. (This may take 3-5 minutes).
Spread quickly and smoothly over top of cooled blondies.
Sprinkle cinnamon chips over top of icing. Press cinnamon chips gently into the icing so they adhere. Refrigerate a few hours or overnight before serving.
These blondies are easier to cut if you refrigerate them before cutting into bars.

PEACH CINNAMON BLONDIES
(My own concoction)
Peach Cinnamon Blondies
Equipment
- 1 9×13" glass baking dish
- 2 small sauce pans
- 2 wooden spoons
- 1 large mixing bowl
- 1 nut chopper if nuts are not previously chopped
- 1 whisk
- measuring cups
- measuring spoons
- 1 sharp knife to dice peaches
Ingredients
BLONDIES:
- 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
- 2 cups light brown sugar packed
- 2 large eggs
- 1 cup salted butter melted and browned (2 sticks)
- 1 tbsp. pure vanilla extract NO substitutes
- 1 cup ripe bananas mashed with a fork
- 1/2 tsp. sea salt
- 2 cups peaches peeled and diced
- 10 oz. bag cinnamon chips
- 1 cup walnuts chopped (measure after chopping)
CINNAMON ICING:
- 1/2 cup salted butter (1 stick)
- 1 cup light brown sugar packed
- 2 cups powdered sugar
- 4 tbsp. half and half or whole milk
- 1 tsp. ground cinnamon
- 1/3 cup Cinnamon Chips
Instructions
BLONDIES:
- To brown the butter: Place butter in saucepan over medium heat and bring to a boil.
- Boil, stirring constantly until lightly browned.
- This may take five or ten minutes.
- Once butter has browned, place browned butter in a mixing bowl.
- Add brown sugar and mix thoroughly with an electric mixer.
- Allow mixture to cool about five minutes.
- Meanwhile, place bananas on a plate and mash with a fork; set aside.
- If the mixture still has not cooled sufficiently, wait a few more minutes before adding eggs, vanilla, mashed bananas and salt.
- (So the egg doesn’t scramble!).
- Mix again with electric mixer until thoroughly mixed.
- Stir in flour, peaches, cinnamon chips and walnuts.
- Stir mixture until well combined.
- Pour mixture into a greased 9×13” glass baking dish.
- Bake at 350° for about 45-50 minutes until a toothpick inserted in center comes out clean.
- Allow blondies to cool completely before icing with Cinnamon icing.
CINNAMON ICING:
- Melt butter over medium heat in medium-sized saucepan.
- Add brown sugar, cinnamon and half-and-half and bring to a boil.
- Remove from heat.
- Cool icing 5 minutes.
- Add powdered sugar and whisk until smooth.
- This may take three to five minutes to get all the lumps out.
- Spread over cooled blondies.
- Sprinkle top of icing with cinnamon chips as evenly as possible.
- Press cinnamon chips very lightly and gently into the icing to adhere.
