Red Velvet Funfetti Cookies
Red Velvet Funfetti Cookies are a dream. A couple of weeks ago I made these delicious cookies which have already been pinned a lot on Pinterest. I loved the idea of putting lots of sprinkles in a cake mix and I decided to feature it a different way. That’s when I came up with the idea of Chocolate Funfetti Cookies, Coconut Funfetti Cookies and Red Velvet Funfetti Cookies.

I’m still trying to clean out my pantry and this was a way to get rid of a box of Red Velvet cake mix and another jar of rainbow sprinkles! On top of that the cookies tasted awesome.
Red Velvet Funfetti Cookies have the delicious chocolate taste you expect in red velvet cookies, plus loads of rainbow sprinkles to make them even more festive and pretty! Plus they are super quick and easy to mix up since they start with a cake mix!
Hey, these cookies can be whipped up and out of the oven in about 15 minutes time. Wow! I enjoy quick and easy especially when it’s topped off with superb taste!

I originally posted this recipe in March 2013 before I started using my Canon camera so they weren’t as sharp and clear as I would have liked. I’ve been remaking all those first-year blog recipes so I can get better pictures, but because I posted almost 600 pictures that first year, that’s a lot of recipes to remake!
I recently remade these cookies (January 2016) so I could get some fresher pictures. Red Velvet Funfetti Cookies are just as easy as can be. Really. You’ll love them.
Red Velvet Funfetti Cookies are not only pretty, they have awesome taste.
I love all the sprinkles in these delicious cookies.
Take a platter of these wonderful cookies to holiday or office parties and you’ll be cleaned out in no time.
Here’s what I did.
I used these ingredients.
Place red velvet cake mix in a mixing bowl. Add baking powder and stir to combine.
Add eggs, oil, vanilla and rainbow sprinkles.
Stir with a wooden spoon to combine.
Scoop dough with a cookie scoop and place on cookie sheets sprayed with cooking spray.
Bake about 14-16 minutes or until done. These cookies plump up nice. They don’t flatten out like some cookies do.
Red Velvet Funfetti Cookies have a marvelous taste, use only a few ingredients, and are quick and easy to make.
Red Velvet Funfetti Cookies are very festive for holidays but you can find the ingredients to make them any time of the year.
These cookies will satisfy any sweet tooth craving.

RED VELVET FUNFETTI COOKIES
(Recipe inspired from my Funfetti Cake Batter Cookies)
Red Velvet Funfetti Cookies
Equipment
- 2 large 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 large cookie scoop
- 1 spatula
Ingredients
- 1 box Red Velvet cake mix
- 1/3 cup canola oil or use coconut oil or avocado oil
- 1 tbsp. real vanilla extract
- 2 large eggs
- 1 tsp. baking powder
- 1 cup rainbow sprinkles jimmies not nonpareils
Instructions
- Stir baking powder into red velvet cake mix.
- Add oil, vanilla, eggs, and sprinkles and stir with a wooden spoon until very well combined.
- Spray cookie sheets with cooking spray.
- Scoop dough with a large cookie scoop and place on prepared cookie sheets.
- Bake at 350° for about 12 minutes or until done.
- Rotate racks half way through cooking time.
- Cool.

I used a Strawberry cake mix and chopped strawberries! Delicious! Made a butter cream frosting with fresh mashed strawberries to top the cookies. It became too dippy so it was served as a dip for the cookies. It was well received but next time I am not adding the butter. Just going with strawberries and powdered sugar for frosting.

Hi, Cathy. If you have that problem again, use less butter or more powdered sugar to firm up the icing! So glad the recipe worked well with strawberries!
