I spent the last half of October and first half of November baking all of our cookies for our annual Christmas Cookie Extravaganza this year. I ended up baking 16 different kinds of cookies and brownies, 3 kinds of scones, one donut recipe, muffins, and two cinnamon roll recipes. Everything was super scrumptious but, of course, we had our favorites! 🙂
The basic Ooey Gooey Bars are so easy to make and this particular recipe uses only 6 ingredients! The crust starts with a butter recipe yellow cake mix. Add an egg and some butter and spread it into a baking dish. So easy. The cream cheese layer includes eggs and powdered sugar. The topping is chopped Reese’s Peanut Butter Cups. This dessert is simply outstanding.
I made these luscious Ooey Gooey Bars for our holiday baking, but you can whip up a batch any time of the year. This is a fantastic way to use up halloween candy too! If you enjoy the luscious flavors of chocolate, peanut butter and cheesecake, you’ll swoon over these amazing brownie-type bars.

These bar-type cookies are so drool-worthy!
The cheesecake layer in the middle really sets these brownies off wonderfully.
Here’s what I did.
I used these ingredients.
Place cake mix in a mixing bowl. Add egg and melted butter.
Stir ingredients to combine.
Press mixture into a greased 9×13″ glass baking dish. If the mixture seems too sticky, very lightly sprinkle the batter with flour.
Place softened cream cheese in a separate mixing bowl. Add eggs and powdered sugar.
Beat with an electric mixer until texture is smooth and creamy.
Spread cream cheese mixture over top of crust layer with a rubber spatula. This is a double batch recipe using an 18×26″ cookie sheet pan.
Spread the cheesecake filling over top of the crust layer all the way to the sides, covering completely.
Unwrap Reese’s Peanut Butter Cups. (I used the miniatures). Chop Reese’s Cups into small pieces.
Sprinkle chopped Reese’s Peanut Butter Cups over top of the cheesecake filling.
Bake at 350 degrees for about 40-45 minutes or until cheesecake layer is just set.
Reese’s Peanut Butter Cup Ooey Gooey Bars are marvelous for tailgating parties.
Beware! These lovely brownies are addictive! You’ll want more than one. 🙂
