Coconut Cranberry Overnight Oatmeal

Coconut Cranberry Overnight Oatmeal is a fantastic breakfast idea during the holidays. If you’re a savvy shopper and have freezer space, buying fresh cranberries during the season and then using them throughout the year is a real bonus. After Christmas baking I ended up with a lot of extra cranberries on hand. I decided to make up this delicious oatmeal recipe with the remainder. I added coconut and walnuts and used coconut milk and vanilla extract for a little flavoring. I did NOT add sugar. I rarely add sugar to my Overnight Oatmeal recipes because I like to sweeten my oatmeal with Monk Fruit Sweetener and my husband prefers to add bananas.

I know some people just can’t do coconut. If that’s you, just skip it. If you’re using it, don’t add more than a cup. The coconut will absorb a lot of the milk in the recipe, so this is sufficient without it taking over the texture of the oatmeal. You can even use a little less (about a half cup) if you want a little flavor but aren’t a huge fan. Cranberries are a different story. I used three cups in this recipe. If you like fruity stuff, you may be able to use four cups. Just remember, because cranberries are SO tart, you will need more sugar or sweetener when eating to counter-balance all that tartness.
I rarely make my oatmeal overnight. But if you have a crockpot with a programmable timer that is surely the way to go. Most of the time my oatmeal recipes take about four hours on low if I use less liquid, but if I fill the crockpot (like for this recipe), the crockpot usually takes about six hours. I allow the crockpot to cool about an hour after cooking and then pack away all the oatmeal into individual containers for the week. Pop it in the microwave and you’re good to go.
Coconut Cranberry Overnight Oatmeal is a wonderful way to enjoy steel-cut oats for breakfast with a little fruity pizazz along the way. Coconut and walnuts add a nice, crunchy texture. I use real coconut milk in the recipe and not a blend with almond milk which is mostly water. Add some sugar, Maple Syrup or Monk Fruit Sweetener and you’re ready for breakfast!

I add NO sugar to the recipe when I make it. I add Monk Fruit Sweetener to individual portions later and my husband prefers sliced bananas over top. Use brown sugar, granulated sugar or Maple Syrup to sweeten the oatmeal if desired. The cranberries are tart so this recipe WILL NEED SWEETENER of some kind!
My husband eats some flavor of oatmeal every morning for breakfast. He prefers his fruity!
Here’s what I did.
I used these ingredients.
Pour steel-cut oats into the bottom of a crockpot.
Wash and rinse cranberries in a colander with running water. Drain.
Add cranberries to crockpot with walnuts, coconut, salt and vanilla extract.
Add coconut milk.
I add enough liquid to bring the ingredients almost to the top of the slow cooker.
Stir ingredients to combine.
Cook on low setting of crockpot overnight for approximately 6 hours.
Serve Coconut Cranberry Overnight Oatmeal with sweetener of your choice, and extra cranberries and walnuts, if desired.
I usually bake oatmeal during the day and then pack it down into small serving containers. Pop it in the microwave when you’re ready to eat breakfast!
Whether you eat from a mug or a bowl, Overnight Oatmeal always hits the spot.

Coconut Cranberry Overnight Oatmeal
Equipment
- 1 crockpot a programmable crockpot is preferred
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 colander
Ingredients
- 24 oz. steel-cut oats (I use Bob's Red Mill)
- 80 oz. coconut milk not coconut/almond blend
- 1 tsp. sea salt
- 1 tbsp. vanilla extract
- 2 cups chopped walnuts
- 1 cup shredded sweetened coconut (can use 1/2 cup or skip entirely)
- 3 cups fresh cranberries washed
Instructions
- Spray a large 6 or 7-quart crockpot very generously with cooking spray.
- Combine all ingredients and spread into crock pot.
- Cook on low overnight for approximately 6 hours.

If you freeze cranberries during the season, this oatmeal can be enjoyed all year long!
If you have a crockpot with a programmable timer, that’s the best way to make this recipe. Simply program the recipe to be done when you’re ready to be up and going.
I’ve not tried this recipe with dried cranberries, but because those are sweetened, you won’t need quite as much sugar or sweetener if you try this with dried cranberries.
