Lemon Blueberry Biscuits
I have to admit I love Homemade Biscuits! But give me sweet biscuits with lemon and blueberries? That’s taking biscuits to a new level. And, yes, we loved them! These easy drop biscuits include lemon yogurt and fresh blueberries in the biscuit. The icing includes lemon peel and lemon juice to bump up those lovely lemony flavors. Oh my, Lemon Blueberry Biscuits were absolutely delicious.

I’ve found a lot of fantastic Taste of Home recipes over the years and this is one of them. I like to make treats for our Hostess Committee on Sunday mornings whenever we serve as ushers. We come early. My husband makes coffee and I bring goodies. I usually end up making muffins, but I do like to mix it up every now and then with biscuits (sweet), scones or pie crust cinnamon rolls. Yum. I’ve had a lot of wonderful feedback from all the treats we serve, and it’s a way to use that desire to bake and be in the kitchen!
Lemon Blueberry Biscuits turned out incredibly good. The flavor melded well together and the texture was wonderful. Nowadays, more and more of the folks are willing to try my goodies because they know I’m not going to bring in anything that tastes bad!!! Even the younger kids that have more selective appetites are enjoying my treats.
These delectable biscuits are perfect for a weekend, company or holiday breakfast or brunch. They’re also delightful for a “breakfast for dinner” menu. And if you’re one of those guys or gals who enjoy a sweet something with your morning coffee, Lemon Blueberry Biscuits are just the thing. Enjoy.
Lemon Blueberry Biscuits are heavenly!
These sweet biscuits are filled with blueberry and lemony taste.
Every bite is scrumptious!
Lemon Blueberry Biscuits are marvelous for a weekend, company or holiday breakfast buffet.
Here’s what I did.
I used these ingredients for the biscuits.
Put unbleached flour in a mixing bowl. (Bleached flour toughens baked goods). Add granulated sugar, baking powder, baking soda and salt.
Stir ingredients to combine; set aside.
Grate lemon peel and set aside.
Place lemon-flavored Greek or Icelandic yogurt in a mixing bowl. Add eggs, lemon peel and butter.
Whisk ingredients to combine.
Wash blueberries well in a colander.
Pat blueberries dry between layers of paper towels.
Add blueberries to yogurt mixture.
Stir to combine.
Add blueberry mixture to dry mixture.
Here the blueberry mixture is added on top of the dry mixture.
Stir to combine until there are no crumbs on the bottom of the bowl.
Use a cookie scoop to scoop dough.
Place scoops of biscuit dough onto a greased cookie sheet. Be sure to leave plenty of room between the biscuits because they expand a lot while baking.
Bake at 400 degrees for 15-18 minutes until biscuits test done and are lightly browned on top. Allow biscuits to cool 5 minutes before removing to wire cooling racks.
I used these ingredients for the icing.
Place powdered sugar in a mixing bowl. Add lemon juice and grated lemon peel.
Whisk ingredients to combine.
Drizzle icing mixture over top of biscuits.
Allow the icing to dry a little bit and set up before transferring biscuits to a serving platter to serve.

LEMON BLUEBERRY BISCUITS
(Recipe adapted from Taste of Home, The Complete Guide To Baking, pg. 23, “Lemon Berry Biscuits”. Note: these are now referred to as “Blueberry Biscuits.”)
Lemon Blueberry Biscuits
Equipment
- 2 large cookie sheet pans
- 1 large mixing bowl
- 1 medium mixing bowl
- 1 whisk
- 1 wooden spoon
- 1 colander
- measuring cups
- measuring spoons
- 1 grater or lemon zester
Ingredients
BISCUITS:
- 2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1/3 cup granulated sugar
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 1/4 tsp. sea salt
- 1 cup lemon yogurt (8-ounces) Greek or Icelandic yogurt (see note below)
- 1 large egg slightly beaten
- 1/4 cup salted butter melted (1/2 stick)
- 1 tsp. grated lemon peel
- 1 cup fresh blueberries washed
LEMON ICING:
- 3/4 cup powdered sugar
- 1 tbsp. lemon juice
- 1 tsp. grated lemon peel
Instructions
BISCUITS:
- Preheat oven to 400°.
- Spray two cookie sheets with cooking spray.
- In a large mixing bowl, combine the flour, granulated sugar, baking powder, baking soda and salt.
- In a small mixing bowl, combine the lemon yogurt, egg, melted butter and lemon peel.
- Wash blueberries and pat dry between layers of paper towels.
- Add blueberries to yogurt mixture.
- Add yogurt mixture to dry ingredients and stir until no crumbs remain at the bottom of the bowl.
- Drop dough by using a ¼ cup cookie scoop, two- to three-inches apart onto prepared baking sheets.
- Bake at 400° for 15-18 minutes, or until biscuits are lightly browned.
- Remove from oven.
- Allow biscuits to cool on cookie sheets about 5 minutes before removing to wire cooling rack.
- Add glaze.
LEMON ICING:
- Combine glaze ingredients in a small bowl with a whisk.
- Drizzle over warm biscuits.
