Molasses Date Sandwich Cookies
Christmas is a wonderful time of the year. We always celebrate with a large assortment of Christmas cookies. These Molasses Date Sandwich Cookies were certainly some of my favorites! I used an old Molasses Cookie recipe, added dates, and made sandwiches (i.e. whoopee pies) by adding some canned vanilla frosting. They turned out so scrumptious.

We were really busy in October and early November making up Christmas Cookies for our Christmas Cookie Extravaganza this year. I made a baker’s dozen with about two-thirds of the cookies being in the shape of cookie cups! Those were a lot of fun. I made a Triple Chocolate Brownie, a Peanut Butter Brownie, a Mint Chocolate Fudge Brownie, a Toll House, Pumpkin, Gingerbread, Cherry and Butter Pecan. Regular cookies or blondies were certainly in the minority this year–almost everything was shaped like cookie cups!
We baked about 5,000 cookies this year. After bagging, sealing and labeling each one we stuffed our freezers full! We finally started distributing them after the first week of December once we got back from visiting our kids and grandkids over Thanksgiving. It’s a long, involved process, but we enjoy the journey as well as tasting all those sweet treats.

Molasses Date Sandwich Cookies are delectable treats for the holiday season.
These sweet Molasses Cookies are jazzed up with some spices and dates and then a layer of vanilla frosting is added to sandwich them together. They are so delicious.
These cookies freeze really well too, if you need to bake them in advance.
Molasses Date Sandwich Cookies are rich, decadent and heavenly!
Here’s what I did.
I used these ingredients.
Soften butter. Add granulated sugar, brown sugar, baking powder, baking soda, salt, egg, vanilla, cinnamon, ginger and cloves.
Add molasses and buttermilk.
Mix with an electric mixer until smooth.
Add unbleached all-purpose flour (bleached flour toughens baked goods) and chopped dates.
Stir ingredients to combine.
Use a large cookie scoop or ice cream scoop to measure out cookies.
Place dough on greased cookie sheet pans.
Bake at 350 degrees for about 18-19 minutes. Rotate cookie sheets on oven racks after 9 minutes of baking time so cookies bake more evenly.
Allow cookies to cool in pans about 10-15 minutes. Remove cookies to wire cooling racks. Spread icing on the bottom of one of the cookies. Try to match cookies of similar shape and press top cookie over top of icing.
Transfer cookies to a wire rack after adding icing and making sandwiches until you finish putting them all together.
Remove cookies to a serving platter to serve and enjoy!

MOLASSES DATE SANDWICH COOKIES
(My own concoction)
Molasses Date Sandwich Cookies
Equipment
- 2 18×26" cookie sheet pans or 3 large cookie sheets
- 3 wire cooling racks
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 large cookie scoop
- 1 sharp knife + cutting board if dates are not previously chopped
- measuring cups
- measuring spoons
- 1 table knife or spreader (to spread the icing on the cookies)
Ingredients
- 2/3 cup salted butter softened
- 1 cup granulated sugar
- 1 cup light brown sugar packed
- 1 large egg
- 1/2 cup molasses
- 1 tsp. pure vanilla extract
- 5 1/4 to 5 1/2 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 2 tsp. ground cinnamon
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. sea salt
- 1 tsp. ground cloves
- 1/2 tsp. ground ginger
- 2/3 cup buttermilk or soured milk (see directions below)
- 2 cups chopped dates
- 16 oz. can vanilla frosting
Instructions
- Cream butter, sugars, egg, molasses, vanilla, baking powder, baking soda, salt, ginger, cinnamon, ground cloves and buttermilk.
- Slowly mix in flour until incorporated.
- Stir in dates with a wooden spoon.
- Mixture will be sticky.
- Scoop cookie dough with a large cookie scoop and press dough firmly into scoop.
- Place cookie dough onto greased baking sheets or baking sheets sprayed with cooking spray.
- Bake at 350° for 18-19 minutes.
- Rotate cookie sheets on racks every nine minutes while baking.
- Allow cookies to cool completely before adding icing.
- Transfer to wire cooling racks.
- Spread a few tablespoonfuls of icing on the bottom of one cookie and top with another cookie of similar shape and size.
