
Mint Chocolate Fudge Cookie Cups
We buy these wonderful mint fudge flavored baking chunks regularly at Walmart. They are terrific to use in Tea Cakes, cookies, brownies, brownie cups, muffins and all things sweet (including gluten free goodies)! They were certainly wonderful in these Mint Chocolate Fudge Cookie Cups. These cookie cups start with one of my favorite Chocolate Chip Cookie recipes but I swapped out mint fudge flavored baking chunks for the chocolate chips instead.

I made these back in December for one of our Wednesday night youth group functions at church. I heard back that they were very well received. I try to make a lot of things that I know they’ll eat, rather than try out a lot of new stuff on the kids. But I took a chance with these jewels and was glad I did.
If you enjoy the flavors of mint and chocolate, these baking chunks have a very light essence of mint so the flavor doesn’t overwhelm or overpower the chocolate. I have some neighbors that beg me for anything I make with these baking chunks! They just gobble them up. 🙂

Mint Chocolate Fudge Cookie Cups are awesome!

These substantial cookies are loaded with chocolate.

The mint very subtly flavors the cookie so it doesn’t overwhelm or overpower the chocolate.

Chocolate and mint pair so wonderfully together!
Here’s what I did.

I used these ingredients. I purchase the Mint Fudge Flavored Baking Chunks at our local Walmart.

Soften butter and place in a large mixing bowl with granulated sugar, brown sugar, eggs, pure vanilla extract, baking soda and salt.

Mix with a electric mixer until smooth.

Add unbleached all-purpose flour (bleached flour toughens baked goods). Add 2 packages of mint fudge flavored baking chunks.

Stir ingredients about 3-5 minutes until very well combined.

Spray regular-sized muffin tins with cooking spray. Scoop cookie dough with a large 1/4 cup cookie scoop. For miniature muffin tins, use a small cookie scoop.

Place a full cookie scoop of dough into each muffin tin.

Bake at 350 degrees for 20-25 minutes, or until a toothpick inserted in center comes out clean.

Allow cookie cups to cool completely before removing from muffin tins. Cookie cups will sink slightly in the middle while cooling.

Load Mint Chocolate Fudge Cookie Cups on a tray and serve!

These sweet treats are terrific for Backyard Barbecues and tailgating parties.

MINT CHOCOLATE FUDGE COOKIE CUPS
(My own concoction)

Mint Chocolate Fudge Cookie Cups
Equipment
- 2-3 miniature muffin pans enough for 50 slots
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 1/4 cup cookie scoop for regular-sized muffin tins
- 1 small cookie scoop for miniature muffin tins
Ingredients
- 1 cup salted butter softened, (2 sticks)
- 3/4 cup granulated sugar
- 3/4 cup light brown sugar packed
- 1 1/2 tsp. pure vanilla extract
- 2 large eggs
- 2 3/4 cups unbleached all-purpose flour (bleached flour toughens baked goods)
- 1 tsp. baking soda
- 1/2 tsp. sea salt
- 20 oz. pkg. mint fudge-flavored baking chunks or Andes Mints
Instructions
- Spray 50 miniature muffin tins with cooking spray; set aside.
- Cream butter, granulated sugar, brown sugar, vanilla, eggs, baking soda and salt with an electric mixer until light and fluffy.
- Beat well.
- Add flour and mint fudge-flavored baking chips and stir until thoroughly mixed and no crumbs remain.
- Scoop dough with a large ¼-cup cookie scoop for regular-sized muffin tins and a small scoop for miniature muffin tins. Place dough in prepared muffin tins.
- Bake at 350° for about 14-16 minutes for miniature muffin tins, and 20-25 minutes for regular sized muffin tins.
- Rotate muffin tins on oven racks after 8 minutes of baking time.
- Cool completely.Â
- Loosen sides gently with a table knife to pop cookie cups out of muffin tins.
