
Tomato Feta Salad

Tomatoes are one of my favorite foods, so when I saw this recipe I knew I would have to give it a try. I’m so glad I did. Tomato Feta Salad is wonderful. It’s a very easy salad to whip up since it uses only 8 ingredients. It’s best served right away but you can refrigerate it for several hours if you need to and serve it later as well.

We have a potluck dinner for empty nesters in our church every other month. A couple of weeks ago I brought along this salad with Honey Mustard Baked Chicken and an Apple Spice Cake. All of the recipes were easy–each using about 7 ingredients or less–making it a lot easier to bring several items instead of just one. I took home empty bowls of just about everything. I had only enough tomatoes left to grab a few pictures and the same with the cake–one piece left!
Tomato Feta Salad is a nice side dish for just about any entree, but especially if you’re having a Backyard Barbecue or grilling out with friends. It’s light, refreshing, healthy and low calorie and even gluten free if you need it to be. This is one of those salads that will go great with hamburgers, ribs or even grilled fish or pork chops. Plus, it’s so E-A-S-Y!
If you need a quick salad for a family or company dinner, this one is delicious.

Everyone enjoyed Tomato Feta Salad when we took it to a potluck at church.

This salad is better served immediately after making it, but you can refrigerate it for a few hours if necessary, before serving.

Fresh basil, along with balsamic vinegar and olive oil provide a nice robust flavor for the grape tomatoes.
Here’s what I did.

I used these ingredients.

Place fresh basil, sea salt and balsamic vinegar in a large mixing bowl.

Stir ingredients to combine.

Add diced Vidalia onions. (Vidalia Onions are sweet onions grown in Georgia). Toss mixture to coat; allow mixture to stand 5 minutes.

Wash and halve grape tomatoes and add to dressing mixture. I used an assortment of red, orange, yellow and dark tomatoes. They refer to them as “heirloom” tomatoes or “Constellation” tomatoes here in Texas.

Add olive oil.

Add Feta Cheese.

Stir ingredients to combine; transfer to a serving bowl and serve.

Grape tomatoes come in a range of colors and flavors.

I had two helpings of this delicious salad. It’s healthy, low calorie, gluten free and delightful to the taste buds.

Tomato Feta Salad
Equipment
- 1 large mixing bowl
- 1 serving bowl
- 1 wooden spoon
- 1 cutting board
- 1 sharp knife
- 1 colander to rinse and wash grape tomatoes
- measuring cups
- measuring spoons
Ingredients
- 2 tbsp. balsamic vinegar
- 1 tbsp. fresh basil minced (or more, if desired)
- 1/2 tsp. Celtic sea salt (I used Baja Gold)
- 1/2 cup Vidalia onion coarsely chopped (or sweet onion)
- 5 oz. Angel Sweet grape tomatoes halved
- 3/4 lb. grape tomato medley halved (I used constellation grape tomatoes that included, red, orange, yellow and dark colored tomatoes)
- 2 tbsp. olive oil
- 1/2 cup Feta cheese crumbled
Instructions
- In a bowl, combine balsamic vinegar, fresh basil and salt.
- Stir well.
- Add onion and toss well to coat.
- Allow mixture to stand for 5 minutes.
- Add tomatoes, olive oil and Feta cheese.
- Toss again to coat well.
- Serve salad with a slotted spoon.
