Loaded Bacon and Cheese Sweet Potato Bake

I can’t rave enough about this fantastic Loaded Bacon and Cheese Sweet Potato Bake! For those who like loaded baked potatoes with bacon, sour cream, cheese, and chives, this is a sweet potato version. I’m sure you will love it too. Instead of double-baking the potatoes, however, I mashed the sweet potatoes and added the filling ingredients. Then I baked the casserole again and added more cheese, bacon and sliced green onions on top. It was A-M-A-Z-I-N-G!!!!

I could have sat down in one sitting and eaten the whole thing! But I was a good girl and denied myself that pleasure. 🙂 Since this Sweet Potato Bake does have a lot of bacon and cheese in it, it’s not low in calories. 🙁 It is high in taste, though. Oh, my it is so delicious.
I would have used a whole bag of green onions (half in the casserole and half on top) if I’d had them, but since I didn’t, I used three green onions on top and about 1/2 cup of diced red onions inside. For those of you who aren’t afraid of eating bacon, this is pretty clean eating overall, too. I used bacon that had been cured with apple cider for a little more flavor. You can use uncured bacon if you prefer a healthier version.
I have to admit I love making sweet potatoes with a savory flair instead of always sweet. This recipe sure satisfies that longing. It’s a great casserole for holidays, but you can make this for your family anytime. I like it even for a main dish.
This is a great sweet potato dish for company and holidays like Thanksgiving or Christmas. I like to make it frequently when I serve ham. Loaded Bacon and Cheese Sweet Potato Bake is one awesome recipe. These sweet potatoes are loaded with a capital “L,” and DELISH with a capital “D.” They’re also dynamic comfort food!

I initially posted this recipe in June 2013. I had just started taking pictures with my new Canon camera so they were not the best by any stretch. I recently remade this recipe (October 2019) when we had the Young at Heart group from our church over for dinner one Friday night.
I served it with Apricot Glazed Ham, Cheesy Spinach Bake and Quick Sourdough Bread. We had so many amazing sides, salads and desserts that night. One gal from our care group actually ate three large servings of this casserole. Yes, it’s that good.
Loaded Bacon and Cheese Sweet Potato Bake is just that–LOADED with bacon and cheese. It’s wonderful!
Here’s a close up so you can see all the melted cheddar cheese, bacon, and green onions on the top. This savory sweet potato bake has the most amazing flavors. I loved this recipe.
Loaded Bacon and Cheese Sweet Potato Bake is a great option for holiday baking since there are already so many sweet dishes like Cranberry sauce, pies, and sweet breads and rolls served on those occasions. I served it with Apricot Glazed Ham and Cheesy Spinach Bake.
Here’s what I did.
I used these ingredients.
Place sweet potatoes on a parchment paper-lined cookie sheet. Pierce each sweet potato with the tip of a knife a couple of times.
You will want to place the potatoes on parchment paper or foil. Otherwise, when the sugar leaks out from the sweet potatoes it burns on the pan. Very difficult clean up.
Bake sweet potatoes at 400 degrees for about an hour and a half, or until completely cooked in the centers.
Cool sweet potatoes for a few minutes. Peel sweet potatoes and place in large mixing bowl.
Mash potatoes with a potato masher. I like doing this rather than using an electric mixer because it leaves a little texture.
Add butter, cheddar cheese, bacon, chives and either red onion or green onions.
Add salt and pepper to taste.
Combine ingredients thoroughly with a wooden spoon.
Place sweet potato mixture in a 9×13″ glass baking dish that has been sprayed with cooking spray.
Bake at 350 degrees for 30-45 minutes until casserole is heated through. Remove from oven.
Sprinkle remaining cheddar cheese on top.
Sprinkle remaining bacon on top of the cheese.
Sprinkle green onions on top of the bacon.
Bake an additional 10 minutes at 350 until heated through.

This sweet potato casserole was so sumptuous. Sweet potatoes made this way are a real treat.
I used about 20 ounces of bacon and 8 ounces of cheese in this recipe, so it really is LOADED! Loaded Bacon and Cheese Sweet Potato Bake tasted superb with Apricot Glazed Ham and Cheesy Spinach Bake.

LOADED BACON AND CHEESE SWEET POTATO BAKE
(My own concoction inspired from my Sweet Potato Bacon Boats recipe)
Loaded Bacon and Cheese Sweet Potato Bake
Equipment
- 1 9x13" glass baking dish
- 1 large mixing bowl
- 1 large roasting pan to bake the sweet potatoes
- 1 skillet or microwave to cook the bacon
- 1 potato masher
- measuring cups
- measuring spoons
- 1 vegetable peeler
Ingredients
- 6 large sweet potatoes baked
- 8 oz. pkg. sharp Cheddar cheese divided use
- 20 oz. bacon crisp-fried and broken into small pieces, or microwaved
- 6 tbsp. unsalted butter
- 1 tbsp. dried chives or fresh
- 1/2 cup red onion diced or 5 to 6 large green onions, diced
- 3 green onions sliced
- 1 tsp. sea salt or kosher salt
- 1/4 tsp. pepper
Instructions
- Bake sweet potatoes.
- Microwave bacon slices approximately 45 seconds to one minute per slice until cooked through. (Or you can fry in a skillet until done).
- Break into small pieces.
- Peel sweet potatoes and place in a large mixing bowl.
- Mash down potatoes with potato masher.
- Add butter, 1 cup of Cheddar cheese, chives, salt, pepper, red onions (or green onions), and half the bacon.
- Stir to combine.
- Place in 9x13” baking dish that has been sprayed with cooking spray.
- Bake 30-45 minutes at 350° or until heated through.
- Remove casserole from oven.
- Sprinkle casserole with remaining Cheddar cheese, remaining bacon pieces, and green onions.
- Heat through about 10 minutes or until cheese melts.

Loaded Bacon and Cheese Sweet Potato Bake is great served with ham, pork, or chicken.
