Spring Mix with Peaches, Walnuts and Feta
Spring Mix with Peaches, Walnuts and Feta is one of our favorite salad recipes. I was making a salad for dinner last night and as I got to the point where I was going to start layering it, I decided I didn’t want a regular tossed salad, I wanted something different.

Anyone that knows me or reads my posts knows how much I love salads especially green salads that have fruit in them. But I’ve had quite enough of spinach salads with strawberries, thank you.
I really wanted something with peaches, walnuts and cheese. I would have preferred using goat cheese if I had any, but I couldn’t find any at the store the other day so I would have to settle for Feta. I put the grape tomatoes away since I didn’t think they would go well with peaches and got online to see if there was anything that looked like what I wanted to make.
I found a couple of recipes, but the closest one was a Taste of Home recipe I ended up using as my model. I did tweak it a little bit, and the dressing was tweaked a lot from the original recipe.
I first made this recipe in September 2012, still in the early days of my blog. The pictures were unclear–certainly not enough to inspire you to try this luscious salad like you should. I remade this delicious salad yesterday (January 2015) and tweaked it — this time to perfection!
I added an extra peach and 4 additional tablespoons of honey to the salad dressing. Wow, it was sensational. I also adjusted the salad ingredients a little. This time I made it with two 6-oz. bags of romaine lettuce with shredded carrots and red cabbage and skipped the spring mix entirely. I would recommend that you substitute avocado oil for the canola oil in the salad dressing, as it’s much healthier and more readily available these days.
Either way works fine, and if you prefer another lettuce use whatever you like! I served it to several ladies and teenagers who were helping me in the kitchen make 40 cream pies for a pie eating contest are having at our church on Sunday night. Everyone wanted seconds and the bowl was completely cleaned out with a few of them wanting more!
If you’re looking for a fabulous tossed green salad recipe with fruit, then this salad’s for you! This is a great summer salad when peaches are readily available. The peaches, toasted walnuts, bacon and feta cheese add sensational flavor to the other ingredients in the salad and the tasty peach vinaigrette is utterly awesome! Give it a try and you will have your company wanting more, just like mine!
Spring Mix with Peaches, Walnuts and Feta is a sensational salad that’s great for holiday entertaining–especially in the summer.
This scrumptious salad is to die for! Once you take a bite, you won’t be able to stop!
The homemade peach vinaigrette is awesome.
Here’s what I did.
I put two bags of romaine lettuce with carrots and red cabbage in a large salad bowl. Add sliced cucumber, sliced red onion separated into rings, and 5-6 miniature bell peppers, cored and sliced.
Microwave 6 slices of bacon on a microwave safe plate with a paper towel underneath and on top of the bacon. Set aside to cool. Break into 1-inch pieces. Toast walnuts about 5-10 minutes in an oven or toaster oven at 350. Add toasted walnuts and bacon to the salad.
Add sliced peaches and feta cheese on top. Refrigerate until ready to serve.
I used these ingredients for the salad dressing. (I highly recommend changing out the canola for avocado oil. It’s healthier and tastes wonderfully in salad dressing.)
I substituted honey for the sugar in the recipe because I am trying to stay off sugar as much as possible. I increased the honey in the recipe so the dressing wasn’t as tart. I also added a peach. I used the chopper option of my emulsion blender. I did not peel the peaches, but I quartered them when I put them into chopper container.
This salad dressing was amazing. Refrigerate until ready to serve.
We loved the Peach Vinaigrette. My additions of an extra peach and more honey made this delightful dressing spectacular. The salad couldn’t have been more perfect!

SPRING MIX WITH PEACHES, WALNUTS AND FETA
(Recipe inspired by Taste of Home’s Tossed Salad with Peaches, Country Women, August/September 2008)
Spring Mix with Peaches, Walnuts and Feta
Equipment
- 1 large salad bowl with tongs
- 1 blender
- 1 small cookie sheet to roast walnuts
- measuring cups
- measuring spoons
- 1 sharp knife to cut vegetables
- 1 toaster oven or regular oven to toast walnuts
- 1 mason jar with lid
Ingredients
SALAD:
- 3 medium peaches unpeeled, sliced
- 2 bags romaine lettuce with shredded carrots and red cabbage (or spring mix, or any combination of lettuces)
- 1/3 cup red onion thinly diced
- 1 cucumber thinly sliced
- 2-3 large red, orange and yellow miniature peppers sliced
- 6 strips bacon cooked and broken into 1-inch pieces (make sure your bacon is gluten free)
- 1/2 cup whole walnuts toasted
- 4 oz. pkg. Feta cheese crumbled
PEACH VINAIGRETTE:
- 2 medium ripe peaches unpeeled
- 6 tbsp. honey or granulated sugar
- 2 tbsp. lemon juice
- 2 tbsp. apple cider vinegar
- 1 tbsp. rice vinegar
- 1/4 tsp. salt
- 1/3 cup canola oil (avocado oil is a much better choice)
Instructions
SALAD:
- In a large salad bowl, layer the romaine, miniature bell peppers, red onion, cucumber, bacon, walnuts, Feta cheese and 3 of the peaches, sliced and unpeeled, set aside.
- To serve, place salad on plate.
- Drizzle with salad dressing.
PEACH VINAIGRETTE:
- Cut peaches in quarters; place in a blender. (Don't peel the peaches).
- Add honey (or sugar), oil, lemon juice, vinegars and salt; cover and process until blended.
- Transfer mixture to a salad dressing dispenser or a mason jar with a lid.

It really is delicious. Increase the sugar or honey you use in the dressing by about a tablespoon and I think it will be perfect!

It is really good. I would make one change and that is to increase the sugar (or honey if that’s what you’re using) in the dressing by at least one more tablespoon. It’s a little tart. But the rest is wonderful!
