Banana Mini Morsel Bars
Oh, my, Banana Mini Morsel Bars are so delightful. This delicious cookie is composed of a couple of my favorite things. Chocolate chips–need I say more? And, bananas. I love bananas. I eat 2 or 3 a day usually either in yogurt or with some kind of nut butter like macadamia nut butter or almond butter or even peanut butter. So anytime I can find a recipe that combines some of my favorite things, then I have to fit it into my schedule and make it up.

Banana Mini Morsel Bars have all the delicious flavor and texture of banana bread. Yet they include chocolate chips and are made in cookie-bar form. This is a thin bar in composition, but that doesn’t mean it’s thin on flavor. I made a batch of these tasty bars for our church office last week and everyone loved them.
They certainly satisfy any cravings for chocolate you may have or any sweet tooth addiction. On top of that, they really are pretty quick and easy to make. You don’t have a lot of steps, nor an elaborate icing that has to be made. Instead you dust the tops with confectioners’ sugar and you’re good to go.
I found this delightful recipe on the Nestle’s baking site Very Best Baking a few years ago. I copied the recipe down into my family cookbook. When I actually went to make them last week, I realized the recipe was also on the back of a Nestle’s miniature chocolate chips package. I only slightly adapted the recipe. If you love to bake, then I highly recommend their website for all kinds of wonderful ideas. The Nestle’s test kitchens are some of the best.
This is a fairly quick and easy cookie recipe that you can spread into a pan. You don’t have to mess with shaping or rolling. If you have some bananas that need to be used up, then this is the perfect recipe! You and your family are sure to enjoy it.

Banana Mini Morsel Bars are a great way to use up overripe bananas!
Here’s what I did.
Place softened butter, granulated sugar, brown sugar and egg in a large mixing bowl.
Add mashed bananas, salt, baking powder and vanilla.
Mix with an electric mixer to combine.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add miniature chocolate chips.
Stir with a wooden spoon to combine.
Grease a 10×15″ jelly roll pan. Pour prepared cookie batter into pan and smooth the top.
Bake at 350 for 30-40 minutes or until a toothpick inserted in center comes out clean.
Cool bars completely before sprinkling with powdered sugar. Cut into 48 bars.

BANANA MINI MORSEL BARS

Banana Mini Morsel Bars
Equipment
- 1 10x15" jelly roll pan
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- measuring cups

- 1 spatula
- 1 plate
- 1 fork
Ingredients
- 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 2 tsp. baking powder
- 1/2 tsp. sea salt
- 3/4 cup unsalted butter softened
- 2/3 cup granulated sugar
- 2/3 cup light brown sugar packed
- 1 tsp. vanilla extract
- 3 medium ripe bananas mashed
- 1 large egg
- 2 cups Semi-Sweet Chocolate Mini Morsels (12-ounces)
- 2 tbsp. powdered sugar for garnish
Instructions
- Preheat oven to 350°.
- Mash bananas on a plate with a fork; set aside.
- Grease a 15 x 10-inch jelly roll pan.
- Beat butter, granulated sugar, brown sugar, vanilla extract, egg, bananas, salt and baking powder with an electric mixer in a large mixing bowl until creamy.
- Stir in flour and chocolate chips.
- Spread into prepared jelly roll pan.
- Bake for 30-40 minutes or until wooden pick inserted in center comes out clean.
- Cool completely.
- Sprinkle with powdered sugar.
