Funfetti Gooey Butter Cookies
Funfetti Gooey Butter Cookies are fantastic. Of course, it doesn’t hurt that I’m a “sprinkles” girl. 🙂 I’m one of those people who really try out the recipes they find on Pinterest! I love a good recipe, especially if it’s something completely different than my old stand-bys.

Probably about 90-95% of the time the recipes I’ve tried have turned out exceptionally well. With a few exceptions I’ve had to make adjustments along the way. There have only been a handful that were so awful I had to throw them out! Maybe that’s because I can make adjustments on the fly without any difficulty.
It’s also because I can usually look at a recipe and determine right up front if it’s going to be the flavors we enjoy. Or if it’s the textures we like and if it’s worth making at all. I suppose that’s due to almost 40 years of a LOT of cooking. Also, somewhere along the way, giving myself permission to fail and not worry so much if the recipe doesn’t turn out perfectly.
Most days, I don’t have time for a lot of gourmet-type recipes. Many take a lot of time, use a lot of steps, and use a lot of costly ingredients. I like the quick and easy recipe just like everyone else! Even better is when the recipe has very few ingredients and not very many steps. And, of course, it’s better still when those recipes turn out fantastic!
This is one of those recipes! Funfetti Gooey Butter Cookies are quick and easy. They include very few ingredients. Above all, Funfetti Gooey Butter Cookies deliver! They are a great cookie. In fact, I liked these cookies and the ease of making them so much that I will probably put them on my Christmas Cookie Extravaganza list this year when we make thousands of cookies for friends, neighbors, relatives and coworkers.
While these cookies are similar to my Funfetti Cake Batter Cookies, these have a different texture because of the cream cheese in the batter. Funfetti Gooey Butter Cookies are the real deal as you will see if you make up a batch for yourself.

Funfetti Gooey Butter Cookies are soft, plump and delicious!
Each cookie is filled with funfetti sprinkles!
These cookies have great texture. Plus, every mouthful is filled with sprinkles. How can you lose?
Here’s what I did.
Place softened butter and softened cream cheese in a mixing bowl. Add an egg.
Mix with an electric mixer until well combined.
Add a box of funfetti cake mix and mix on low speed until ingredients are combined.
Add sprinkles. I added more because I like more sprinkles!
Stir all ingredients with a wooden spoon to combine.
Roll dough into balls and then roll in powdered sugar. It took me about 2/3 cup of powdered sugar to get all the cookies coated well.
Place cookies on lightly sprayed cookie sheets.
Bake cookies at 350 about 10-12 minutes or until done.
Sit down with a glass of milk and enjoy your cookies!

FUNFETTI GOOEY BUTTER COOKIES

Funfetti Gooey Butter Cookies
Equipment
- 2 large 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 wooden spoon
- 1 electric mixer
- measuring cups
- measuring spoons
- 1 spatula
Ingredients
- 8 oz. pkg. cream cheese softened
- 1/2 cup unsalted butter at room temperature (1 stick)
- 1 large egg
- 1 box Funfetti cake mix
- 1/2 cup sprinkles (or more if desired)
- 2/3 cup powdered sugar
Instructions
- Mix cream cheese, butter and egg with an electric mixer until well blended.
- Add cake mix and continue beating until thoroughly mixed.
- Add sprinkles and stir into cookie mixture.
- Chill dough one hour.
- Preheat oven to 350 degrees.
- Roll dough into balls and roll in powdered sugar.
- Place on cookie sheets that have been only lightly sprayed with cooking spray.
- Bake about 10-12 minutes.
- Rotate cookie sheets on oven racks after 6 minutes of baking time.
- Allow cookies to cool before removing from cookie sheets

Girl!!
I’ve made these recipes more times than I can count!! They’re sooo addicting and wayyy to easy to make!!! The first time I made these, I forgot to chill the dough and they still turned out awesome! I did have to bake them longer (maybe 15 minutes) but they were deeeeelicuous. So now I don’t even bother to chill the dough! (For no reason other than I’m lazy haha!).
Anyway, this recipe is revolutionary 😂. I asked my sister if she knew she could make cookies with a box of cake mix and she lost her mind!! We’ve also tried this with (my fave) Cherry Chip cake mix!! Oh! My! God!
