Gluten Free Peach Surprise is amazing. You’re not going to believe how extraordinary this dessert turned out! I made it from the same basic recipe as my Cherry Surprise recipe. Except instead of using canned pie filling, I made up my own peach pie filling with peaches from our peach trees out back. Not only that, I used a gluten free flour and coconut oil so the recipe is both gluten free AND vegan!

If you are gluten intolerant, there are some really terrific gluten free flours available these days. I’ve tried lots of gluten free products over the past couple of years, but Cup4Cup is one that really delivers. It wasn’t available when I initially posted this recipe in August 2014, but it is available today (May 2018). It’s an excellent blend of flours that provide optimum results for gluten free baking.

Gluten Free Peach Surprise is a lovely dessert I made for our Sunday school class fellowship a couple of weeks ago. I had promised our hostess (who has severe Celiac Disease), that I would make her a gluten free pasta dish, a gluten free pasta salad, and a gluten free dessert. Because we had so many peaches ready to pick off our peach trees, I whipped up three peach desserts to take with me as well.

I decided to make one more gluten free for her  so I chose to make one of my tried and true recipes with gluten free flours to see how it would turn out. It was spectacular. Not only that, this dessert out of the four I brought that day was the one everyone raved over the most. When they found out the recipe was both gluten free and vegan they were all amazed and many people lined up to get a piece. Several people came back for seconds. Everyone loved Gluten Free Peach Surprise.

Well, guys and gals, over the past two weeks I’ve made 38 different desserts with our peaches so far.  I have two more cobblers I’m making tomorrow for a friend who wants her future son-in-law to sample them for his wedding. He doesn’t want a Groom’s Cake but, instead, wanted either Peach Pie or Peach Cobbler.

So she thought of me and asked me if I would consider making some stuff for their wedding. Tomorrow’s efforts will conclude my peach baking efforts for this summer with 40 different treats! Yes, I know, you will be sick and tired of peach desserts after I’m finished. I’m sorry….well not really! :), but I’ve got some of the most amazing desserts to share with you over the next two months.

I’ve made pies, cobblers, bars, cookies, muffins and cakes and they all turned out so tasty. If you’re looking for ways to use up peaches over the next month or so, then stay tuned. You will have your choice from lots of fantastic recipes.

Gluten Free Peach Surprise is wonderful. The crust layer uses gluten free flour, oatmeal, coconut oil, brown sugar and coconut. This mixture is used both for the crust and the topping. Then I cooked fresh peaches and made them into a pie filling and syrup. I also added almond extract. After spreading the thickened peaches on top of the crust layer, I sprinkled hazelnuts over top, before crumbling the remaining topping over the peach mixture. While I served Gluten Free Peach Surprise plain, you can also serve this with whipped topping or ice cream.

I used these ingredients.

Pamela’s was the only readily available gluten free flour at the time. I highly recommend Cup4Cup or other gluten free flours as Pamela’s mix is not a one-to-one ratio for regular flour. It’s also harder to work with than GF flours available now.

Begin by making peach pie filling. Place white sugar, cornstarch cinnamon and almond extract into a saucepan over medium heat.

Add water and peaches.

Boil and cook peaches about 3-5 minutes or until thick. Remove from heat and set aside.

Make crust layer: Place gluten free flour, oatmeal, brown sugar, coconut, and coconut oil in a large mixing bowl.

Stir ingredients to combine.

Grease a 9×13″ baking dish. Press about half to two-thirds of the streusel mixture into the prepared dish.

Spread peach filling over top of streusel crust. Sprinkle with chopped hazelnuts. (Or you can use the nuts of your choice).

Sprinkle remaining streusel mixture over top of peach layer.

  • 1 mixing bowl
  • 2 wooden spoons

Ingredients
  

  • 2 cups oatmeal
  • 1 cup coconut oil
  • 4 1/2 cups fresh peaches
  • 1/2 cup granulated sugar
  • 1 heaping tbsp. cornstarch
  • 2 cups gluten free flour (see note below)
  • 1 cup water
  • 1 cup light brown sugar packed
  • 1 cup coconut
  • 1 cup hazelnuts chopped, (or your favorite kind) (measure after chopping)
  • 1 tsp. almond extract
  • 1 tsp. cinnamon

Instructions
 

  • Combine ½ cup granulated sugar, cornstarch and cinnamon in a saucepan over medium heat.
  • Add almond extract and water slowly to combine.
  • Stir in peaches.
  • Boil and cook over medium heat about 3-5 minutes or until thick.
  • Combine coconut oil with oatmeal, GF flour, brown sugar, and coconut.
  • Spread about 2/3 of the mixture into a greased 9x13” baking dish.
  • Spread peach filling over top.
  • Sprinkle nuts over top of the peaches.
  • Crumble remaining oat mixture over top of peaches.
  • Bake at 350° about 45 minutes or until hot and bubbly.
  • Serve warm with ice cream, if desired.

Notes

NOTE: Regular peach pie filling can also be used. Just add the cinnamon and almond extract to it and pour over top of crust layer.
 
NOTE: When I initially posted this recipe Pamela's baking mix was about the only GF flour readily available. Now there are many GF products available that have a much better flour blend and have a one-to-one ratio of GF flour to all-purpose flour. I have found that Pamela's flour is very thin so I have to use a lot more to get the same consistency as regular flour or other GF flours. My preferred blend is Cup4Cup.
 
NOTE: While I used hazelnuts, you can substitute pecans, walnuts, pistachios or almonds with great results.

    Hi Teresa,

    May I know how much cinnamon is needed as it is not listed in the ingredient list? And do you think canned peaches work the same in this recipe? Sometimes it can be very difficult to get fresh peaches in this part of the world where I am living. Also they can be extremely expensive. Thank you for sharing this recipe. I can’t wait to try them out!

      Hi, Po. I am so sorry about leaving the cinnamon ingredient off! It is one teaspoon. Yes, I think you can substitute canned peaches. I would probably dice them up before using.

    Did you use regular oats for this? reg oats are not gluten free.

      Wow, Galynn, I did not realize Quaker Oats could not certify their oats as being pure oats and thus not contaminated with gluten. I normally use oats from Azure Standard which are steel-cut, organic and certified gluten free. Thanks for letting me know.

      I actually served this to someone who has full-blown celiac disease. If you put a serving utensil in a food with gluten and then it’s used in a non-gluten dish she has immediate and severe consequences. Thankfully, she was okay with eating this but I will remember for the future.
