Peachy Party Cookies
Peachy Party Cookies are awesome. These cookies are filled with cinnamon chips and fresh peaches and while simple in ease of preparation, they are big on taste. I really enjoy working with cinnamon chips in recipes. They go great with apples, peaches, pears, and brown-sugar recipes. I’ve used them in cakes, cookies and breads and they always turn out wonderfully.

By now you probably realize that I love peaches. I was overjoyed when we purchased this property a few years ago and found out there were six mature peach trees in the back section of property. But this is the first year that we’ve been able to get any harvest out of them! The first year we were vacationing during the harvest season and when we got back all the peaches had dropped to the ground, taken out by squirrels and birds. Last year was a record heat wave year and the peaches died on the branches. This spring we had a sprinkler system installed with a special line going out to the section where the peach trees are, so this has been our first year to enjoy any peaches. We’ve really enjoyed the peach desserts as a result of a bountiful harvest.
I based this recipe on my M&M Party Cookies of which I’ve also made my Holiday Chocolate Mint Cookies from. Instead of M&Ms or mint chocolate chips I used cinnamon chips. Then I added finely, diced peaches to the batch. I did have to increase the flour a little because the peaches do provide extra moisture. But this recipe turned out crispy and quite delicious.
If you’re in the mood for a delicious sugar cookie with cinnamon and peaches, then this cookie recipe is the one for you. It’s sweet, rich and decadent. Anyone with a sweet tooth in your family is sure to love these jewels. They’re great for summer baking, potlucks, and backyard barbecues when peaches are in season. If however, you are just dying to make these and peaches are out of season you can try them with frozen or canned peaches, but pat the peaches dry very well before using, and add a little extra flour (1/3 cup or so) while you’re at it due to the extra moisture. Then be prepared for Y-U-M!

Peachy Party Cookies are crispy on the outside and chewy on the inside.
I loved all the cinnamon chips in the cookies. Cinnamon and peaches go so well together.
Here’s what I did.
I used these ingredients to make Peachy Party Cookies. The pyrex measuring cup on the far right is Crisco shortening.
Place Crisco shortening in a bowl. Add sugar, brown sugar, eggs, baking soda, salt and vanilla.
Mix well with an electric mixer to combine.
Add UNBLEACHED all-purpose flour. Bleached flour toughens baked goods. Add finely, diced peaches and cinnamon chips.
Stir ingredients with a wooden spoon to combine. Using a 1/4 cup ice cream scoop, scoop dough and place on greased cookie sheets.
Bake at 350 for 15-18 minutes for these whopper-sized cookies.
Peachy Party Cookies turned out quite delicious.
We loved the combination of flavors as well as the texture of this cookie.

Peachy Party Cookies
Equipment
- 2 large 18x26" cookie sheet pans
- 1 large mixing bowl
- 1 electric mixer
- 1 wooden spoon
- 1 sharp knife to cut and pare peaches
- measuring cups
- measuring spoons
- 1 large cookie scoop
- 1 spatula
Ingredients
- 1 cup Crisco shortening
- 1 cup light brown sugar firmly packed
- 1/2 cup granulated sugar
- 2 tsp. vanilla extract
- 2 large eggs
- 2 1/2-2 3/4 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods
- 1 tsp. baking soda
- 1 tsp. salt
- 2 cups peaches peeled and finely diced
- 10 oz. pkg. Hershey's cinnamon chips
Instructions
- Mix shortening, sugars, vanilla, eggs, baking soda and salt with an electric mixer until creamy.
- Add flour, peaches and cinnamon chips.
- Stir with a wooden spoon to combine.
- Using a ¼ cup cookie scoop, scoop out dough and place on greased cookie sheets about 2-3” apart.
- Bake at 350° for about 15-18 minutes for this size cookie or until golden brown.
- Rotate cookie sheets on oven racks every six to seven minutes of baking time.
- Cool.
