Creamy Ambrosia Salad

Creamy Ambrosia Salad is one of the BEST salads you will ever sink your teeth into. It has a lovely and sweet, cream cheese base that’s filled with two colors of grapes, mandarin oranges, pineapple and coconut. Then it’s sprinkled with finely, diced pecans, coconut and brown sugar.

The taste is utterly amazing. It’s also extremely simple and easy to make, so it’s a great throw-together salad for picnics, potlucks, back yard barbecues and especially for company.
Back in July, we had one last swimming fellowship at our house before we knew we were going to have to start packing up our home and moving on. We had sold our house and were in the process of moving into a rental until our new house was built.
We made several slider recipes for our guests, and a couple of salads, including a Creamy Grape Salad that everyone just raved over. That salad was so good I decided to try it with fruits other than grapes and came up with this delicious Creamy Ambrosia Salad. After all, who doesn’t enjoy ambrosia?
I made Creamy Ambrosia Salad for friends who just had a baby and they enjoyed it just as much as I did. My husband is one who really enjoys creamy, fluffy salads like this. He’d rather eat something like this for dessert than cake any day. You will understand once you try it.
It’s just a perfect salad. I don’t recommend using berries, however, as they will stain the creamy coating a dark purple color. But you could probably add additional fruits like kiwi, melon, mango, peaches and pears if you desired.
While this isn’t necessarily one of the healthiest salads you’ll ever eat, it sure is one of the tastiest! 🙂 And, it is gluten free for those with gluten intolerance. I highly recommend putting this fabulous recipe on your holiday meal plan menus for this fall. Don’t be surprised if your family wants you to make it over and over and over. It’s that good.

Creamy Ambrosia Salad is a great salad to serve for Thanksgiving, Christmas or other holiday dinners.
Here’s what I did.
I used these ingredients.
Combine softened cream cheese, sour cream, granulated sugar and vanilla in a mixing bowl.
Cream with an electric mixer until smooth.
Add drained mandarin orange segments and chunk pineapple, coconut, green and black (or red) grapes. Stir to combine.
Sprinkle brown sugar, finely diced walnuts and a little more coconut on top. Refrigerate until ready to serve.
The nice thing about making this salad is it’s really easy. Plus you can make it hours ahead of time for company if you prefer.

Creamy Ambrosia Salad
Equipment
- 1 electric mixer
- 1 mixing bowl
- 1 wooden spoon
- measuring cups
- measuring spoons
- 1 sharp knife to cut fruit, if necessary
- 1 nut chopper if nuts are not finely diced
Ingredients
- 20 oz. can pineapple chunks drained
- 11 oz. can mandarin oranges drained
- 2 rounded cups green seedless grapes
- 2 rounded cups red seedless grapes
- 1 cup coconut
- 8 oz. pkg. cream cheese softened
- 8 oz. sour cream
- 2 tsp. real vanilla extract
- 1/3 cup granulated sugar
- 3-4 tbsp. pecans finely chopped
- 1-3 tbsp. brown sugar (I usually use one tablespoon)
- 10 maraschino cherries or sliced strawberries for garnish, if desired
Instructions
- Combine cream cheese, sour cream, vanilla extract and granulated sugar with an electric mixer until smooth.
- Stir in pineapple, oranges, grapes and coconut.
- Sprinkle with chopped pecans, brown sugar and a little additional coconut.
- Refrigerate until ready to serve.
