Holiday Casseroles and Side Dishes is an extensive collection of our family’s favorite holiday side dishes. These are all hot dishes – no salads, fruit, appetizers, or meat recipes. Just lots of veggies made every way imaginable.

There are 120 recipes including asparagus, beans & green beans, cabbage, carrots, corn, broccoli, spinach, acorn, butternut, spaghetti, yellow and zucchini squash, potatoes, sweet potatoes, beets, brussels sprouts and even a mixed vegetable category.
No compilation like this would be complete without sharing a few of our favorite recipes. My husband’s hands on favorite is Berry Mallow Yam Bake, he asks for it every year! My dad’s favorite was Candied Sweet Potatoes. One of the casseroles I made all the time when my kids were growing up and they (and everyone else) loved, is Corn Pudding.
My sister, Phillis’s favorite is Baked Acorn Squash. My mom made it all the time when we were growing up and she makes it every Thanksgiving. One my mom made frequently when I was growing up was Old-Fashioned Green Beans. Everyone in our family loves green beans made this way.
Both my sister Phillis’s family and our family grew up with Mom’s Turkey Dressing. It was my dad’s favorite and I don’t think any of us have found anything we enjoy more. My oldest son always loved my Mary’s Potatoes recipe. I made it a lot for company when he was a teenager.
My daughter-in-law Candice makes another similar recipe that her family enjoys, Hash Brown Potato Casserole. My brothers always enjoyed my mom’s Skinny Stuffed Baked Potatoes – a double baked potato recipe that’s a real keeper.
A few of my personal favorites are: Butternut Squash Bake, (I can eat this like dessert!), Squash and Apple Bake which I made a lot for the holidays in years gone by, Mexican Corn Casserole (I can eat a whole pan of this!), Fried Eggplant, Yellow Squash or Zucchini (I absolutely drool over this dish), Garlic Mashed Potatoes (this is amazing), and a favorite from my grandmother, Fried Potatoes, (I can live off this recipe).
A couple other favorites are Creamy Spinach Gratin (my favorite way to eat spinach), Spaghetti Squash Gratin (another drool-worthy recipe), Sweet Potato Bacon Boats (I could eat this every day and not get tired of it), and Sweet Potatoes Parmesan (comfort food at its finest).
These cheesy recipes are so hearty and filling. I could certainly eat them without meat and be totally satisfied. Finally, you’re going to think I’m crazy by adding these last two favorites, but they were amazing. Never did I dream that Cherry Tomato Cobbler and Baked Onions would be some of my favorite foods.
They may sound odd but they are incredibly good recipes. While I made the Cherry Tomato Cobbler gluten free and vegan, you can make it with regular flour and butter if you desire.
These are favorite company-requested recipes we’ve had over the years or when I’ve taken these side dishes to potlucks: Carrot Casserole (everyone always wants seconds on this), Corn Casserole (something I’ve made frequently and usually comes back empty), Broccoli, Cauliflower, Carrots & Cheese (we never have leftovers when I make this), Loaded Bacon Ranch Potato Bake (everyone enjoys eating potatoes with Ranch Dressing mix!), Eggplant Parmesan (which can be served for a Meatless Monday dish).
We also enjoy Sweet Potato Casserole (this is one of those recipes that people keep going back for, too. It’s almost like eating a dessert with a praline topping), and Loaded Bacon and Cheese Sweet Potato Bake (so succulent and satisfying). Another that you will flip over is my Carrot Souffle. People who hate carrots, love this dish.
