Poppyseed Mandarin Salad is a fabulous gluten free side salad. This seven ingredient recipe is quick and easy to make, and combines the best of savory and sweet flavors. Cashews, two cheeses, cranberries and mandarin oranges make this salad irresistible and mouthwatering. It's a delightful salad for weeknight dinners or for holidays and company.
10oz. pkg.hearts of romaine salad mixor other salad mix
11oz. canmandarin orange segmentsdrained
1cuplightly salted cashews
3/4cupsharp cheddar cheeseshredded
3/4cupsmoked Swiss cheeseshredded
2/3cupdried cranberries
3/4cuppoppy seed dressing
Instructions
Layer salad mix in a bowl.
Top with mandarin oranges, cashews, cheddar cheese, swiss cheese and cranberries.
Refrigerate until ready to serve.
Toss salad.
Drizzle with salad dressing to coat.
Serve immediately.

NOTE: You can also toss the salad and serve the salad dressing on the side; but I would not toss the salad unless you are feeding about 10 people at the same time.NOTE: I used a combination of Butter Bliss and Green Leaf lettuces.NOTE: I used Brianna’s Poppy Seed Dressing.
