Butternut Squash Red Pepper Casserole is a delightful sweet and savory side dish that will soon become a favorite with your family. This easy recipe includes butternut squash and red bell peppers. It's flavored with garlic, rosemary, parsley and Parmesan cheese to bring out a rich, dramatic, sumptuous flavor that can't be beat. This fantastic casserole is perfect for holidays like Thanksgiving, Christmas or Easter. Everyone will want seconds. Gluten free.

Equipment

  • 1 9x13" glass baking dish
  • 1 sharp knife to cut vegetables
  • 1 vegetable peeler
  • measuring cups
  • measuring spoons
  • 1 large mixing bowl
  • 1 wooden spoon

Ingredients
  

  • 3 1/2 lbs. butternut squash peeled, seeds removed, cut in one-inch cubes (see note below)
  • 1 large red bell pepper cut in one-inch cubes
  • 3 tbsp. olive oil or avocado oil
  • 2 cloves garlic finely minced
  • 3 tbsp. fresh parsley minced (or use dried parsley)
  • 1/2 tsp. fresh rosemary finely minced (or use dried rosemary)
  • ground black pepper to taste
  • 1/2 cup Parmesan cheese shredded or grated finely (see note below)

Instructions
 

  • Spray a 9x13” baking dish with olive oil cooking spray.
  • Mix squash, bell pepper, oil, and seasonings in a large mixing bowl and spread into sprayed baking dish.
  • Top with Parmesan cheese.
  • Bake at 400˚ for 1 hour or until done.

Notes

NOTE: I used one cup parmesan cheese.
 
NOTE: I used one and a half butternut squashes.
