2 large heads cauliflower washed and cut up in florets 7 slices thick-cut bacon cut in one-inch pieces and fried crisp (this was 1/2 lb. bacon) 1/2 medium onion chopped fine 1/2 tsp. Salt and pepper to taste 1 tsp. Tony's Creole Seasoning or to taste (see note below)
Fry bacon in a non-stick skillet over medium heat until crisp; remove to paper towel-lined plate and set aside.
Be careful to avoid frying at too high a temperature or too long so that the bacon scorches!
After frying the bacon strips in a non-stick skillet, put the cauliflower florets and onion in the bacon drippings and fry slowly.
Do not add liquid.
Just set the lid on the pot at an angle where the liquid from the steam drips down into the skillet.
Add seasonings.
When cauliflower is almost tender, add bacon back into the skillet.
Remove from heat when cauliflower florets are tender and just starting to brown.
NOTE: I sprinkled about 3/8 teaspoon of Tony’s Creole Seasoning on the finished cauliflower. This is a preference amount. Season to your taste.
