Equipment

  • 1 large salad bowl with tongs
  • 1 sharp knife to cut fruit
  • 1 skillet
  • measuring cups
  • measuring spoons
  • 1 small mixing bowl
  • 1 whisk

Ingredients

SALAD:

  • 18 oz. bag Romaine lettuce blend
  • 2 cups fresh spinach
  • 2 to 3 medium pears thinly sliced, unpeeled
  • 1/3 to 1/2 cup lemon juice
  • 1 cup Pepper Jack cheese shredded
  • 6 slices bacon cooked and broken into 1-inch pieces

SALAD DRESSING:

  • 1/2 cup mayonnaise (I used Hellmann's with olive oil)
  • 2 tbsp. Dijon mustard (I used a honey-mustard, see note below)
  • 1/4 cup Romano cheese grated
  • 1 tsp. garlic powder
  • 1/4 tsp. ground black pepper
  • 6 tbsp. half-and-half or milk (but amount will vary because of the thinner consistency of milk)
  • 1 tsp. granulated sugar or more, if desired for a sweeter dressing

Instructions

SALAD:

  • In a large salad bowl, combine lettuce and spinach.
  • Soak pear slices in lemon juice.
  • Drain on paper towels.
  • Top salad blend with pears, cheese and bacon.
  • Refrigerate until ready to serve.

SALAD DRESSING:

  • Whisk dressing ingredients in a small bowl.
  • Refrigerate until ready to serve.
  • Toss salad with dressing to combine; or drizzle salad dressing over top of individual servings just before serving.

Notes

NOTE: the Honey mustard was from Harrington’s in Vermont. It was in a Christmas gift pack and excellent for this recipe.
