Sea Salt Caramel Meltaways are breathtaking. These melt-in-your-mouth cookies are addictive! They're filled with sea salt caramel chips which cause the cookies to explode with flavor. They're rich, decadent, heavenly and absolutely divine. Every bite will knock your socks off. Terrific for tailgating or office parties, potlucks, backyard BBQs, or any family get-together. Also great for summer holiday fun like Memorial Day, Fourth of July and Labor Day. And don't forget to put these awesome cookies on your list for holiday baking. Everyone will want seconds!

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 spatula
  • 1 1/4 cup cookie scoop
  • measuring cups

Ingredients
  

  • 1 cup unsalted butter softened (2 sticks)
  • 1 cup canola oil or use coconut oil or avocado oil
  • 2 large eggs
  • 1 tsp. real vanilla extract no substitutes
  • 1 cup granulated sugar
  • 1 cup powdered sugar
  • 1 tsp. sea salt
  • 1 tsp. cream of tartar
  • 1 tsp. baking soda
  • 5 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 24 oz. bag sea salt caramel chips (two 12-ounce bags)

Instructions
 

  • Mix butter, oil, eggs, vanilla, sugars, salt, cream of tartar, and baking soda with an electric mixer until smooth.
  • Stir in flour and sea salt caramel chips with a heavy metal spoon.
  • Stir thoroughly; this may take 4-5 minutes.
  • Scoop dough with a large cookie scoop and place about 3-inches apart on greased cookie sheets.
  • Chill cookie sheets with cookie dough in refrigerator one hour.
  • Bake at 350° for about 12-14 minutes or until done.
  • Rotate cookie sheets on racks every six to seven minutes of baking time.
  • Cool completely.

NOTE: My cookies took slightly longer to bake.
