Herbed Beef Stew with Dumplings is a wonderful one-dish meal. This savory and delicious comfort food recipe is made in the crockpot for ease of preparation. It includes potatoes, corn, green beans, peas, carrots, mushrooms and stewed tomatoes along with beef. The dumplings are delicately seasoned and a delightful addition to this hearty mouthwatering meal. Excellent for family or company dinners.
1 1/4lbs.red potatoeswashed and chunked (or 2 large potatoes peeled and cut into chunks)
3largecarrotspeeled and sliced
2ribscelerycut in one-inch chunks
1largeonionchopped
31oz. canstewed tomatoesundrained (I used Italian style)(two 15.5-ounce cans)
4oz. cansliced mushroomsdrained
1tbsp.Worcestershire sauce
1tsp.sea salt
1/2tsp.ground black pepper
1tsp.dried thyme
1tsp.dried chives
1tbsp.dried parsley
3bay leaves
1/2cupfrozen peas
1/2cupfrozen corn
3/4 to 1cupfrozen green beans
DUMPLINGS:
1 1/2cupsall-purpose flour
3tsp.baking powder
1tsp.sea salt
1/2tsp.ground black pepper
1tsp.dried thyme
1tsp.dried chives
1tsp.dried marjoram
1tbsp.dried parsley
1largeeggbeaten
3/4cuphalf-and-half
1tbsp.salted buttermelted
Instructions
BEEF STEW:
Dredge stew beef in flour until well-covered.
Spray crockpot with cooking spray.
Add dredged beef and beef broth and cook on high heat about 2 hours until meat is almost done.
Stir beef.
Add potatoes, carrots, celery, onion, tomatoes, mushrooms and seasonings.
Continue cooking in slow cooker on high for about 2 hours until veggies are almost fork tender.
Remove bay leaves.
Add corn, peas and beans and cook about 30 minutes.
Add dumplings and cook about 45 minutes to an hour or until dumplings are cooked through when checked with a tooth pick.
DUMPLINGS:
In a small mixing bowl, combine flour, baking powder, salt, pepper, parsley, chives, thyme and marjoram.
In a separate bowl whisk egg, half-and-half and melted butter.
Add liquid mixture to dry mixture.
Stir well to combine.
Drop by large tablespoonfuls (or cookie scoops) onto hot stew.
Cover slow cooker with lid and continue cooking in crockpot 45-60 minutes, or until a toothpick inserted in the center of the dumplings comes out clean.
Notes
NOTE: Do not keep uncovering the lid while the dumplings are cooking. Wait a full 45 minutes before checking the first time. If a toothpick inserted in center comes out clean, the dumplings are done. If not, check again in about 15 minutes for desired doneness.NOTE: You can use either gluten free or regular flour in this recipe.NOTE: Slow cooking is not a precise science. You may find that the beef, then the veggies or even the dumplings cook more quickly in your crockpot. You may have to adjust your times. The key is not to overcook the beef and veggies so that everything turns to mush by the time the dumplings are done. In some hot crockpots, this recipe may be done in 3 ½ to 4 hours. Plan accordingly.
