Porky Pig Sweet Potato Skillet is phenomenal. This amazing skillet breakfast includes seasoned sweet potatoes, ham, sausage and bacon, both Monterey Jack and Cheddar cheeses and eggs. It's one hearty breakfast for meat and potato lovers. Terrific for weekend, company or holiday breakfasts. This gluten free recipe is one you'll want to eat every weekend and for special occasions.
1 8-inch oven-proof skillet or 8-inch round baking dish, to serve in
1 sharp knife to cut vegetables
1 vegetable peeler
1 grater or food processor to shred sweet potatoes
1 spatula

Ingredients
1smallsweet potatopeeled and grated
3tbsp.salted butterdivided use
1/2tsp.Salt and pepperto taste
1/8tsp.dried thymedivided use
1/8tsp.dried parsleydivided use
1/8tsp.Italian seasoningdivided use
1/2cupMonterey Jack cheeseshredded
1/2cupsharp Cheddar cheeseshredded
1/3cupbaconcooked, diced
1/3cuphamdiced
1/3cupmild pork sausagecooked and drained
2largeeggs
Instructions
Melt two tablespoons butter in small non-stick skillet.
Sauté sweet potatoes in butter.
Season with salt, pepper, thyme, parsley and Italian seasoning.
Cook and stir until sweet potatoes are fork tender, about 5-7 minutes.
Transfer mixture to an 8-inch oven-proof serving skillet or 8-inch round glass baking dish.
Top with both cheeses.
If meat is cold, warm slightly in skillet that you cooked the sweet potatoes in.
Transfer meat to serving skillet and place on top of cheeses.
Heat in a pre-heated 350 degrees oven for about 5 minutes.
If using a glass baking dish, microwave about one minute to heat and melt cheeses.
In non-skillet, melt remaining butter.
Fry two eggs (sunny-side up) in a tablespoon of butter until cooked.
Season with salt, pepper a dash each of parsley, thyme and Italian seasoning while cooking.
Remove skillet from oven or dish from microwave.
Slide eggs, sunny-side up over top of meats.
Serve immediately.
Notes
NOTE: This recipe will go much quicker if you pre-cook the bacon and sausage.NOTE: You can also pre-cook the sweet potatoes to save time.NOTE: If cooking for more than one, I recommend using a griddle and pre-cook the meat and potatoes the night before.NOTE: This provides one very hearty breakfast. Most people would make two servings out of this entree.
