Peanut Butter Surprises are outstanding. These scrumptious and amazing cookies surprise you with bits of Reese's Peanut Butter Cups in every bite! There an over-the-top cookie that's perfect for tailgating or office parties, potlucks, soccer practice or holiday baking. This is also a terrific way to use up leftover Halloween candy! Equipment

  • 2 18x26" cookie sheet pans
  • 1 electric mixer
  • 1 wooden spoon
  • 1 large mixing bowl
  • 1 spatula
  • 1 1/4 cup cookie scoop
  • measuring cups

  • 1 sharp knife to chop Reese's Peanut Butter Cups

Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup crunchy peanut butter
  • 3/4 cup light brown sugar packed
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 1/2 tsp. real vanilla extract
  • 2 1/2 cups UNBLEACHED all-purpose flour (Bleached flour toughens baked goods)
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. sea salt
  • 3 cups Reese's Peanut Butter Cups chopped

Instructions
 

  • Preheat oven to 350 degrees.
  • Cream butter, peanut butter, sugars, eggs and vanilla with an electric mixer in a large wooden bowl until fluffy.
  • Sift flour, baking powder, baking soda and salt together; gradually stir dry ingredients into mixture.
  • Stir in chopped peanut butter cups.
  • Scoop cookie dough with a large cookie scoop and place on greased baking sheets.
  • Bake 12 to 15 minutes or until lightly browned.
  • Rotate cookies on racks every 6 to 7 minutes of baking time.
  • Cool completely.

Notes

NOTE: When I was baking two racks at a time, my cookies took 21 minutes to bake. When I baked a single rack (and didn’t need to rotate the cookies), the cookies took about 15 minutes to bake. Smaller cookies won’t take so long to bake.
