Monster Brownies are out of this world! These delectable brownies are filled with peanut butter, peanuts, M&Ms, chocolate chips, white chocolate chips and oatmeal. They're absolutely wonderful for holiday baking, potlucks or tailgating parties. If you're looking for irresistible, chewy brownies that will rock your world, these brownies will do it!

Equipment

  • 1 10x15" glass baking dish
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups

  • 1 spatula

Ingredients
  

  • 1 cup creamy peanut butter
  • 1/2 cup unsalted butter softened (1 stick)
  • 1 1/4 cups light brown sugar packed
  • 1 cup granulated sugar
  • 3 large eggs
  • 2 tsp. baking soda
  • 1 tsp. real vanilla extract
  • 4 cups oatmeal (I use old-fashioned)
  • 2 cups M&Ms divided use
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips NOT vanilla chips or white baking chips
  • 1 cup peanuts roasted and salted
  • 2 cups UNBLEACHED all-purpose flour bleached flour toughens baked goods

Instructions
 

  • In a large mixing bowl, beat peanut butter, butter, sugars, eggs, baking soda and vanilla with an electric mixer until smooth and creamy.
  • Stir in oats, one cup M&Ms, chocolate chips, white chocolate chips and peanuts.
  • Stir in flour with a very heavy metal spoon until mixture is very thoroughly mixed; this may take 4-5 minutes.
  • Press mixture into a 10x15” greased glass baking dish.
  • Sprinkle remaining one cup of M&Ms evenly on top.
  • Press M&Ms into the brownies so they adhere slightly.
  • Bake at 350˚ for approximately 25-30 minutes, until top is lightly browned and brownies are set.
  • Cool completely before cutting into bars.

Notes

NOTE: I do not recommend baking these in a shallow cookie sheet or the brownies tend to overcook. However, there will be too much dough for a 9x13” glass baking dish. You’ll need a slightly larger dish to bake this recipe in.
 
NOTE: This recipe calls for white chocolate chips, NOT vanilla chips or premiere white baking chips. Those chips have no cocoa or chocolate in them.
 
NOTE: In the Dallas Metroplex, the only place to find white chocolate baking chips is Kroger's Signature collection or Trader Joe's.
