Keto Dinner Rolls are wonderful. This 4-ingredient recipe is a fantastic alternative for diabetics and those with Celiac or on other special diets. These cheesy rolls are great served piping hot with any of your favorite menus. Also an easy and tasty option for company and holiday dinners or breakfast.
2cupslow moisture mozzarella cheeseshredded (can use cheddar cheese)
1/4cupcream cheesesoftened
1 1/2cupsalmond flournot almond meal
3largeeggsat room temperature, divided use
1tsp.baking powder(optional)
Instructions
Preheat oven to 350°.
In a large mixing bowl, microwave cheeses together about 30 seconds until cheese has begun to melt.
Remove from microwave and allow cheese to cool for several minutes.
Stir cheeses together.
Add almond flour and two of the eggs.
If desired, add baking powder.
Stir well to combine. (See note below).
A soft dough should form.
Form dough into 8 balls. (Six is more realistic).
Place on parchment paper-lined cookie sheet.
Whisk remaining egg in a small bowl.
Brush egg wash on top of each roll.
Bake at 350° for 25 minutes or until tops are well-browned and rolls are set.
Serve hot.
Refrigerate and re-warm leftovers.
Notes
NOTE: To make garlic rolls, eliminate extra egg. Brush tops with a tablespoon or two of melted butter mixed with ¼ tsp. garlic salt or a little fresh, finely minced garlic.NOTE: To melt the cheese, I microwaved it at 50% power for 2 minutes. Then I stirred the cream cheese into the mozzarella cheese and allowed it to cool for 7 minutes before using in recipe.NOTE: I had a difficult time stirring the almond flour and eggs into the melted cheese. I ended up working it all together with my hands (like when preparing meatloaf).NOTE: This recipe makes 8 small rolls. I would recommend making larger rolls and making four or six instead.
