Creamy Garlic Mushroom Chicken Thighs are fantastic! These scrumptious chicken thighs are coated with several tasty herbs and served in a creamy garlic, mushroom and parmesan sauce that's irresistible. It's a terrific recipe for family or company dinners, but you better make plenty! Everyone will want seconds of this sumptuous, gluten free chicken entree.
1 1/2lbs.chicken thigh filletsboneless, skinless, trimmed of any excess fat (about 6-8 thighs)
3/4tsp.onion powder
3/4tsp.garlic powder
1tsp.dried thyme
1tsp.dried marjoram
1tsp.dried rosemary
1/2tsp.sea salt
1/2tsp.ground black pepper
2 to 4tbsp.olive oilor avocado oil
GARLIC, MUSHROOM PARMESAN SAUCE:
1tbsp.salted butter
8oz.fresh mushroomswashed, sliced
4medium clovesgarlicfinely minced
1tsp.dried parsley
1tsp.dried marjoram
1tsp.dried thyme
1tsp.dried rosemary
1 1/2cupsheavy creamor half-and-half
1/2cupParmesan cheesefreshly grated
1tbsp.fresh parsleychopped, for garnish, if desired
Instructions
CHICKEN:
Combine onion powder, garlic powder, thyme, rosemary, marjoram, salt and pepper on a plate.
Coat each piece of chicken evenly on both sides.
Heat two tablespoons olive oil in a skillet over medium heat.
Add chicken thighs.
Cook and sear until browned on each side (about 8 minutes per side).
If necessary, add remaining oil when turning chicken pieces over to other side.
Transfer chicken thighs to a platter and keep warm.
GARLIC, MUSHROOM, PARMESAN SAUCE:
To same skillet, add butter and mushrooms.
Season generously with salt and pepper and cook about 3 minutes.
Add garlic, parsley, thyme, rosemary and marjoram.
Cook until garlic is fragrant, about 1 minute.
Reduce heat to low-medium.
Stir in half-and-half or cream and cook until sauce thickens, about 5 minutes.
Stir continuously.
Add Parmesan cheese and allow it to melt about 2 minutes.
Stir occasionally.
Return chicken to skillet.
Check seasonings.
Add additional salt, pepper or herbs, as desired.
Garnish with fresh parsley.
Notes
NOTE: If you need more seasoning to coat the chicken thighs, sprinkle with the herbs. I would not add more onion or garlic powder or you may find the recipe too salty.NOTE: You can also season each piece of chicken by sprinkling herbs, salts and pepper gently over each side of the chicken in amounts you desire.NOTE: You won’t need the additional oil if you use a non-stick skillet.
