Tropical Fruit Bread will knock your socks off! This lovely sweet bread is made with candied tropical fruit mix, almonds and vanilla chips. It just explodes with flavor. Terrific for holiday baking or taking to office parties. Also great for a holiday breakfast like Thanksgiving, Christmas or New Year's Day. Treat yourself to this wonderful bread this holiday season.

Equipment

  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 whisk
  • 4 miniature bread pans
  • 1 bamboo skewer or knife to check bread for doneness
  • measuring cups
  • measuring spoons
  • 1 electric knife preferred, or very sharp bread knife to cut bread without hacking it

Ingredients
  

  • 8 oz. container Paradise Candied Tropical Fruit Mix
  • 1 1/4 cups granulated sugar
  • 2 tbsp. unsalted butter melted
  • 1 large egg
  • 1/2 cup orange juice
  • 1 cup almonds sliced
  • 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1 tsp. sea salt
  • 1 cup white baking chips (vanilla chips)

Instructions
 

  • Melt butter in large mixing bowl.
  • Whisk in granulated sugar, egg and orange juice.
  • Add dry ingredients, nuts, tropical mix and vanilla chips.
  • Stir well with a wooden spoon to combine.
  • Pour into four greased and floured miniature loaf pans.
  • Bake at 350° for 50-60 minutes or until a toothpick or bamboo skewer inserted in center comes out clean.
  • Cool bread completely before removing from pans.
  • Spread with cream cheese to serve, if desired.

Notes

NOTE: This bread slices down more evenly with an electric knife, rather than a serrated knife.
