Apple Pie Overnight Oatmeal is a mouthwatering breakfast entree that's made in the slow cooker overnight. It uses steel-cut oats, apples, raisins, cinnamon and nutmeg to give it fantastic flavor and pop. It's terrific for company and the oatmeal can be refrigerated or frozen for later use. This recipe is healthy, vegan, gluten free and sugar free. If you have a programmable slow cooker this is an easy, no fail recipe that can't be beat.
4 cupsapplespeeled, diced (per your preference, but four cups is plenty)
2oz.sun-dried raisins
1cupapple peeled and sliced, for garnish, if desired
1tbsp..cinnamonfor garnish, if desired
3/4cupbrown sugar packed, or maple syrup, if desired, for sweeter oatmeal
Instructions
Spray a large 6 or 7-quart crockpot very generously with cooking spray.
Combine first nine ingredients and spread into crock pot.
Cook on low overnight for approximately 5 hours.
Serve garnished with fresh apple slices and a dash of cinnamon, if desired.
Notes
NOTE: You can portion out the servings into microwavable glass or plastic containers. Refrigerate for up to one week and microwave before serving.NOTE: You can also freeze the cooked oatmeal in the same type of containers. Remove from freezer and allow to defrost in refrigerator a day or so before using and microwaving as noted above.NOTE: You can sprinkle the tops of each serving with brown sugar or pour maple syrup over top if desired. But you may find the recipe is sweet enough without additional sugar.NOTE: Overnight oatmeal is something of a misnomer. This recipe was done in about 5 hours in my slowest crockpot.NOTE: The key to this recipe is not overcooking the oatmeal so it sticks onto the sides of the crockpot. Five hours is really all you need.NOTE: This recipe is easiest if you have a slow cooker with a programmable timer. Set the end time for when you want to serve breakfast.NOTE: Oat Milk can be purchased at Walmart and other grocery stores pretty easily now. But you have to go first thing in the morning at Walmart because they sell out so quickly!NOTE: This is NOT a very sweet oatmeal on it's own. You will need to add fresh apple slices or even sliced banana on top of each serving to make the oatmeal sweet enough without sugar. If you don't need a sugar-free recipe, I recommend adding 3/4 cup brown sugar (packed) when cooking the oatmeal in the crockpot. That will provide plenty of sweetness for each serving.NOTE: Another option is to use Stevia extract drops or Monk Fruit sugar to cut calories and sugar.
