Date Coconut Blondies are rich, luscious and the perfect snack for any occasion. These amazing cookies are filled with dates and coconut and have a lovely chewy texture that can't be beat. They're terrific for potlucks, tailgating or office parties or to provide for snacks when you're at soccer practice or ball games. Every bite will have you hungering for more.

  • 1 11x17" jelly roll pan
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups

Ingredients
  

  • 1 1/2 cups unsalted butter softened
  • 1 1/2 cups light brown sugar firmly packed
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 tsp. real vanilla extract
  • 4 1/2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 tsp. baking soda
  • 1 tsp. sea salt
  • 16 oz. boxes dates chopped (two 8-ounce boxes)
  • 2 cups sweetened flaked coconut

Instructions
 

  • Preheat oven to 350°.
  • Grease or spray a 11x17” jelly roll pan with cooking spray.
  • In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
  • Beat at medium speed with an electric mixer until fluffy.
  • Stir in flour, dates and coconut with a heavy-duty spoon until combined.
  • Stir thoroughly; this may take 4-5 minutes.
  • Bake for about 30 minutes at 350°, or until lightly browned and a toothpick inserted in center comes out clean.
  • Cool completely.
