Rainbow Chip Peanut Butter Cookies are sensational. These fantastic Peanut Butter Cookies are amped up in flavor since they're loaded with Rainbow chips. They're great for Christmas Cookie Exchanges, tailgating parties, potlucks or birthdays. If you have a sweet tooth, these lovely cookies will cure any craving.

Equipment

  • 3 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 spatula
  • 1 small cookie scoop

Ingredients
  

  • 1 cup light brown sugar packed
  • 1 cup granulated sugar
  • 1 cup extra crunchy peanut butter
  • 3/4 cup unsalted butter
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1/4 tsp. sea salt
  • 1 tsp. baking soda
  • 2 tbsp. hot water
  • 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 15 oz. pkg. 10-oz. Yum-mallow Rainbow Chip Morsels (or one and a half 10-ounce bags Yum-mallow Rainbow Chip Morsels)

Instructions
 

  • Mix brown sugar, granulated sugar, peanut butter, butter and eggs with an electric mixer until smooth.
  • Add vanilla, salt, baking soda and hot water and mix again until well blended.
  • Stir in flour and one package Rainbow Chip Morsels with a wooden spoon until combined.
  • Stir thoroughly; this may take 4-5 minutes.
  • Drop with a small cookie scoop onto cookie sheets that have been sprayed with cooking spray.
  • Press additional Rainbow Chip Morsels into the tops of each cookie.
  • Freeze on cookie sheets about 5-10 minutes.
  • Bake at 350° about 12-15 minutes or until done.
  • Rotate cookies on racks every 6 minutes while baking.
  • Cool completely.
