Coconut Pecan Bars are awesome. These scrumptious jewels are filled with coconut and pecans. They're crunchy, chewy and just plain good. Because this recipe makes a large batch, these are perfect for potlucks, tailgating parties, family reunions or backyard barbecues. If you need a dessert to feed a crowd, this one is irresistible!

Equipment

  • 1 15x20" cookie sheet pan
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 electric mixer
  • 1 spatula
  • 1 nut chopper if nuts are not previously chopped
  • measuring cups

Ingredients
  

  • 1 1/2 cups unsalted butter softened (3 sticks)
  • 1 1/2 cups light brown sugar firmly packed
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 2 tsp. vanilla extract
  • 4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 1/2 tsp. baking soda
  • 1 tsp. sea salt
  • 2 cups sweetened coconut
  • 3 cups pecans finely diced (measure after chopping)

Instructions
 

  • Preheat oven to 350°.
  • Grease or spray a large 15-1/2"x20” cookie sheet with cooking spray.
  • In large bowl, combine butter, sugars, vanilla, eggs, salt and baking soda.
  • Beat at medium speed with an electric mixer until fluffy.
  • Stir in flour, coconut and pecans with wooden spoon until combined.
  • Keep stirring; this may take 4-5 minutes.
  • Spread mixture into cookie sheet and pat down firmly.
  • Bake at 350 degrees for about 25-30 minutes, or until lightly browned and a toothpick inserted in center comes out clean.
  • Cool completely before cutting into bars.

Notes

NOTE: Be careful not to over-bake the bars or they may dry out.
 
NOTE: Make sure the cookie dough is stirred really well and ingredients adhere together.
 
NOTE: Start with 4 cups of flour. Use additional flour only if necessary to add body and help the ingredients adhere.
 
NOTE: I was baking multiple pans at the same time. My pans took about 35-40 minutes to bake.
