Equipment

  • 1 9-inch pie plate
  • 1 large mixing bowl
  • 1 electric mixer
  • 1 wooden spoon
  • 1 nut chopper if nuts are not previously chopped
  • measuring cups

Ingredients

  • 2 large eggs
  • 1/2 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 cup unsalted butter melted and cooled slightly
  • 6 oz. white chocolate chips (NOT vanilla chips or premiere white baking chips)
  • 1 cup macadamia nuts chopped (measure after chopping)
  • 1 cup dried cranberries
  • 1 unbaked pie shell

Instructions

  • Preheat oven to 325°.
  • In large bowl, beat eggs until foamy; this will take 3-5 minutes.
  • Beat in flour, granulated sugar and brown sugar until well-blended.
  • Blend in the cooled, melted butter.
  • Stir in dried cranberries, white chocolate chips and macadamia nuts.
  • Pour into pie shell.
  • Bake at 325° for 1 hour or until set.
  • Serve warm with whipped cream or ice cream.

Notes

NOTE: The melted butter needs to cool sufficiently that the white chocolate chips don’t melt when you stir them into the batter.

NOTE: This recipe requires white chocolate chips, NOT vanilla chips or premiere white baking chips. Those do not have any cocoa in the ingredients and are not white chocolate chips. In the Dallas Metroplex the only place I can locate true white chocolate chips is Kroger’s (private selection) and Trader Joe’s.
