Scalloped Corn with Bacon

Scalloped Corn with Bacon is one of those irresistible side dishes you can't get enough of. Bacon makes everything better, including a Corn Casserole! This mouthwatering side dish is perfect for company meals, or holiday dinners like Thanksgiving or Christmas. It's so quick and easy to prepare that you may find it on your regular menu, too!

15 oz. can whole kernel corn drained 15 oz. can creamed corn 3/4 cup 2% milk or half-and-half 1 large egg beaten 1 cup Italian Style bread crumbs 1 cup onions chopped 3 tbsp. green bell pepper chopped 1/2 tsp. Salt and pepper to taste 4 to 5 slices bacon crisply cooked and crumbled 2 tbsp. unsalted butter diced
Fry bacon in skillet until done but not scorched; drain on paper towel-lined plate.
Set aside.
Combine corn, creamed corn and milk or half-and-half in a large mixing bowl.
Add egg.
Add remaining ingredients except bacon and butter.
Pour mixture into a greased 8x12” glass baking dish.
Sprinkle with cooked, crumbled bacon; dot with butter.
Bake, uncovered, at 350 degrees for 30 minutes.
NOTE: I used 5 pieces of thick-sliced bacon.
