Four Cheese Italian Tomatoes are succulent and mouthwatering. Tomatoes are roasted with basil, oregano, thyme & a little olive oil. They're covered with Asiago, Romano, Parmesan and Mozzarella cheeses before baking. The result is phenomenal! These roasted tomatoes are the perfect side dish for any company or holiday meal. This gluten free side is proof positive that tomatoes are not just delicious in sauce or in salads. They are perfect roasted with herbs and cheese. Every bite will have you drooling.
2cupsMozzarella cheeseshredded, or Monterey Jack cheese
1cupRomano cheesefreshly grated
1 to 2tbsp. fresh basilchopped
1 to 2tbsp.fresh oreganochopped
1 to 2tsp.dried thymeor 1-2 tbsp. fresh thyme
1/4tsp.pink Himalayan sea salt
1/4tsp.ground black pepperto taste
1/4cupextra-virgin olive oil
Instructions
Preheat oven to 400° F.
Spray a large cookie sheet with olive oil cooking spray (or line with parchment paper).
Place tomatoes cut-side up in prepared cookie sheet.
Spray or brush tomatoes with olive oil.
Sprinkle seasonings generously over top of tomatoes.
Sprinkle tomatoes with Parmesan, Asiago, Romano and finally Mozzarella cheese over top.
Bake, uncovered, until the tomatoes are tender, about 20-30 minutes.
Notes
NOTE: If you prefer more seasonings, add according to your desire.NOTE: You can cut this recipe by half or two-thirds if you don’t need this many servings.
