Cherry Chip Cookies

Cherry Chip Cookies are extraordinarily good. These easy 5-ingredient cookies, start with a boxed cake mix. Fresh cherries and vanilla chips add an explosion of flavors that will have your mouth watering from the first bite. This is a terrific dessert for summer activities like backyard barbecues, family reunions & potlucks when fresh cherries are in season.

Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 wooden spoon
  • 1 cherry pitter or sharp knife to pit cherries
  • measuring cups
  • 1 spatula

Ingredients
  

  • 15.25 oz. box Betty Crocker Cherry Chip Cake Mix
  • 1/3 cup canola oil or use avocado oil
  • 2 large eggs
  • 12 oz. pkg. vanilla chips or premiere white baking chips
  • 1 cup fresh cherries pitted, diced, (dried thoroughly)

Instructions
 

  • Preheat oven to 350°.
  • Combine cake mix, oil and eggs.
  • Gently stir in vanilla chips and cherries.
  • Spray cookie sheets with cooking spray.
  • Roll cookies into balls and place on prepared baking sheets.
  • Bake at 350° for 13-15 minutes or until done.
  • Rotate cookie sheets every 6-7 minutes.
  • Cool completely.

Notes

NOTE: Because I was baking three racks of cookies at once, my cookies took 18 minutes to make. I also rotated the trays every six minutes.
 
NOTE: These cookies must be rotated during baking or the vanilla chips will darken too much.
 
NOTE: I found it easier to keep my hands moist while rolling cookie dough into balls.
 
NOTE: You must thoroughly dry the cherries before using in this recipe. Otherwise, there will be too much juice and the ingredient mixture will be off. Therefore, the cookies won’t hold their shape and run too much on the cookie sheet.
