Pina Colada White Chocolate Cookies

Pina Colada White Chocolate Cookies are to die for! These luscious cookies will have you drooling from the first bite! This quick and easy 5-ingredient dessert just explodes with flavor. Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 wooden spoon
  • measuring cups
  • 1 spatula

Ingredients
  

  • 15.25 oz. box Duncan Hines Pineapple Supreme Cake Mix
  • 1/3 cup canola oil or vegetable oil (You can use avocado oil)
  • 2 large eggs
  • 11.25 oz. pkg. white chocolate chips NOT vanilla chips
  • 1 cup coconut

Instructions
 

  • Preheat oven to 350 degrees.
  • Combine cake mix, oil and eggs.
  • Stir in white chocolate chips and coconut.
  • Spray cookie sheets with cooking spray.
  • Roll cookies into balls and place three-inches apart on prepared baking sheets.
  • Bake at 350° for 13-15 minutes or until done.
  • Rotate cookie sheets on oven racks every 7 minutes of baking time.
  • Cool completely.

Notes

NOTE: Because I was baking three racks of cookies at once, my cookies took about 18 minutes to make. I also rotated the trays every six minutes.
 
NOTE: These cookies must be rotated during baking or the white chocolate chips will brown on the top rack.
 
NOTE: I found these cookies did better by rolling the dough into balls than using a cookie scoop.
 
NOTE: Be sure to use true white chocolate chips. Most stores only carry white or vanilla chips. They are not the same. In the Dallas area the only two stores that carry white chocolate chips are Kroger and Trader Joe’s.
 
NOTE: I found it easier to keep my hands slightly moist while rolling the cookie dough.
