Cinnamon Chip Snickerdoodles will rock your world! They're rich, decadent and oh, so heavenly. These cookies have cinnamon chips in the batter then they're rolled in cinnamon-sugar. Equipment

  • 2 18x26" cookie sheet pans
  • 1 large mixing bowl
  • 1 electric mixer
  • wooden spoon

Ingredients
  

COOKIES:

  • 1 cup unsalted butter softened
  • 1 1/2 cups granulated sugar
  • 2 large eggs
  • 2 3/4 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/4 tsp. sea salt
  • 10 oz. bag cinnamon chips

CINNAMON-SUGAR MIXTURE:

  • 1/4 cup granulated sugar
  • 1 tsp. cinnamon

Instructions
 

COOKIES:

  • Cream butter, sugar, eggs, baking soda, cream of tartar and salt with an electric mixer, beating well.
  • Add flour and cinnamon chips and stir with a wooden spoon until well combined.
  • Chill dough one hour.
  • Roll into golf ball-size balls then roll the ball in the mixture of cinnamon sugar.
  • Place cookie dough 2” apart on greased baking sheets.
  • Bake at 350° for 15-20 minutes or until done.
  • Rotate cookie sheets on racks about every 6 minutes.
  • Cool completely.

CINNAMON-SUGAR MIXTURE:

  • Stir ingredients in a small bowl to combine.
  • Roll cookies in cinnamon sugar mixture before placing on greased cookie sheets.

Notes

NOTE: I chilled the dough 3 hours and the cookies still flattened a bit. If you want a rounder cookie you can add an additional 1/4 cup flour, but these cookies are really tasty even if they are a little flatter in texture.
 
NOTE: I found these cookies did best taking them out of the oven just after raising, but not quite done. Then they would cook the rest of the way on the cookie sheet, but not flatten out too much.
