Decadent Double Chocolate Brownies

This rich, chocolaty, decadent brownie simply melts in your mouth. It is absolutely amazing. It's made with Ghirardelli chocolate and miniature chocolate chips. Perfect for summer holiday fun, backyard barbecues and potlucks. It's also terrific for holiday baking.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 1 whisk
  • 1 sauce pan
  • 1 wooden spoon
  • measuring cups
  • measuring spoons
  • 1 spatula

Ingredients
  

  • 4 squares Ghirardelli 60% bittersweet chocolate (2-ounces)
  • 1 cup unsalted butter melted (2 sticks)
  • 2 cups granulated sugar
  • 1 cup UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 tsp. real vanilla extract
  • 4 large eggs
  • 12 oz. bag miniature chocolate chips divided use

Instructions
 

  • Melt chocolate and butter in a small saucepan over low heat; cool.
  • With a whisk: beat eggs, add granulated sugar and vanilla.
  • Add cooled chocolate mixture plus flour and combine.
  • Stir in 1 cup of the miniature chocolate chips.
  • Spread into a greased 9x13” glass baking dish.
  • Sprinkle remaining ½ cup miniature chocolate chips on top.
  • Bake at 350° for 45-60 minutes until a toothpick inserted in center comes out clean.
  • Cool completely before cutting into brownies.

Notes

NOTE: Each oven is different. Because these brownies have so much sugar they take a good while to bake thoroughly. The key is baking long enough but not overcooking the brownies so they become tough. The baking time is a guide only. My oven runs slow so I usually end up baking things longer.
 
NOTE: You must cool the chocolate at least 10-15 minutes or you will end up with scrambled eggs!
 
NOTE: You can also substitute unsweetened chocolate for the bittersweet chocolate in the recipe. You can increase the amount to four-ounces or four one-ounce squares.
