Old-Fashioned Cherry Cobbler

This scrumptious Cherry Cobbler is perfect for summer holidays when fresh cherries are in season. It has a delicious brown sugar syrup poured over top of the cherry layer before baking. After the cobbler is baked, cherry syrup remains on the bottom. It is delicious spooned over the top of the dessert before eating.

Equipment

  • 1 9x13" glass baking dish
  • 1 large mixing bowl
  • 2 wooden spoons
  • 1 cherry pitter or sharp knife to pit cherries
  • measuring cups
  • measuring spoons
  • 1 medium sauce pan

Ingredients
  

CHERRY FILLING:

  • 2 cups UNBLEACHED all-purpose flour (bleached flour toughens baked goods)
  • 1 cup granulated sugar
  • 4 tsp. baking powder
  • 1 tsp. sea salt
  • 1 tsp. almond extract
  • 1 cup 2% milk or cream
  • 5 cups cherries pitted, halved, patted dry with paper towels to absorb excess moisture

TOPPING:

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 tbsp. unsalted butter
  • 3 cups water
  • 1 tsp. almond extract

Instructions
 

CHERRY FILLING:

  • In a large mixing bowl combine flour, granulated sugar, baking powder and salt.
  • Add almond extract, milk and cherries and stir just until combined.
  • Pour into a 9x13” greased glass baking dish.
  • Pour topping over top.
  • Bake at 400° for 50-60 minutes or until done.
  • Serve warm or cold with ice cream or non-dairy whipped topping.

TOPPING:

  • Combine ingredients over medium heat in medium-sized saucepan.
  • Bring to a boil and stir until granulated sugar is dissolved.
  • Pour over top of cherry layer.
  • Bake at 400° for 50-60 minutes or until done.

Notes

NOTE:  Pat cherries down well with paper towels to absorb moisture before adding to flour mixture. This will help avoid excess discoloration.
